Yield Makes about 25 truffles

Number Of Ingredients 6

6 ounces fine-quality bittersweet chocolate (not unsweetened), chopped
6 ounces (about 3/4 cup) fresh goat cheese (also known as goat fromage blanc, available in bulk at specialty foods shops)
2 tablespoons confectioners' sugar
1/2 teaspoon vanilla extract
1/8 teaspoon pure lemon extract
1/4 cup unsweetened cocoa powder, sifted, for coating the truffles

Steps:

  • In a metal bowl set over a pan of barely simmering water melt the chocolate, stirring until it is smooth, remove the bowl from the pan, and let the chocolate cool slightly. In a bowl whisk together the goat cheese, the confectioners' sugar, the vanilla, and the lemon extract until the mixture is light and fluffy, whisk in the chocolate until the mixture is combined well, and chill the mixture, covered, for 1 hour, or until it is firm. Form heaping teaspoons of the mixture into balls and roll the balls in the cocoa powder. Chill the truffles on a baking sheet lined with waxed paper for 30 minutes, or until they are firm. The truffles keep in an airtight container, chilled, for 3 days.

Time 1h53m

Yield about 20 truffles

Number Of Ingredients 5

6 ounces bittersweet chocolate, chopped
6 ounces fresh (mild) goat cheese, at room temperature
1/4 cup confectioners' sugar
1/2 teaspoon vanilla extract
1/4 cup sweetened cocoa powder, sifted

Steps:

  • In the top of a double boiler, or in a metal bowl set over a pot of simmering water (make sure the water does not touch the bowl), melt the chocolate, stirring until it is smooth. Set the melted chocolate aside to cool for a few minutes while you prepare the rest of the ingredients.
  • In a bowl whisk together the goat cheese, sugar, and vanilla until it is light and fluffy. Whisk in the melted chocolate until it is well combined. Chill, covered, until it is firm, at least 1 hour.
  • To form the truffles, take a heaping teaspoon of the chocolate/cheese mixture and lightly roll it into a ball with your hands. Roll the finished truffles in the sifted cocoa powder, set them onto a baking sheet lined with waxed paper, and chill until they are firm, about 30 minutes. The truffles can be stored in an airtight container in the refrigerator for up to 3 days.

Tips:

  • Use high-quality chocolate: The quality of your chocolate will directly affect the taste of your truffles. Look for a chocolate with a high cocoa content (70% or higher) and a smooth, creamy texture.
  • Do not overwork the ganache: Overworking the ganache will make it greasy and difficult to work with. Stir it just until it is smooth and combined.
  • Chill the ganache thoroughly: Chilling the ganache will make it easier to work with and will help the truffles hold their shape.
  • Use a variety of toppings: Feel free to get creative with your toppings. You can use chopped nuts, grated chocolate, cocoa powder, or even fresh herbs.
  • Store the truffles properly: Truffles can be stored in the refrigerator for up to two weeks. They can also be frozen for up to two months.

Conclusion:

Goat cheese chocolate truffles are a delicious and easy-to-make treat. They are perfect for any occasion, from a special dinner to a casual get-together. With their creamy texture and rich flavor, these truffles are sure to be a hit with everyone who tries them.
