Goat Cheese and Chive Biscuits (adapted from Southern Lady magazine, Jan/Feb. 2011)
Makes about 1 dozen
3 cups self-rising flour
1/2 cup unsalted butter, cut into cubes
8 ounces goat cheese, crumbled
1/4 cup finely minced chives
2/3 cup half-and-half
2 Tbsp. butter, melted

Steps:

  • 1.Preheat oven to 425 F. Line a baking sheet with parchment paper or spray the sheet with non-stick cooking spray. 2.Place flour in a medium bowling. Using a pastry blender, cut in butter and goat cheese until mixture is crumbly. (You can also use a food processor - but just be sure to 'pulse' until you achieve the desired consistency.) Add chives; stir well. Add half-and-half, stirring just until dry ingredients are moistened. 3.On a lightly floured surface, roll dough to 1/2″ thickness. Cut scones using a 2 3/4″ inch biscuit cutter and place on prepared pan. Bake for 16 to 18 minutes, or until lightly browned. Brush with melted butter. Serve.

Tips:

  • Use fresh herbs: Fresh herbs, such as chives, parsley, or rosemary, add a burst of flavor to these biscuits. If you don't have fresh herbs on hand, you can use dried herbs, but be sure to use half the amount.
  • Don't overwork the dough: Overworking the dough will make the biscuits tough. Mix the ingredients just until they come together, then stop mixing.
  • Chill the dough before baking: Chilling the dough before baking helps the biscuits rise more evenly. You can chill the dough for up to 2 hours, or overnight.
  • Bake the biscuits until they are golden brown: The biscuits are done baking when they are golden brown on top and cooked through in the center. Insert a toothpick into the center of a biscuit; if it comes out clean, the biscuits are done.

Conclusion:

These goat cheese chive biscuits are a delicious and easy-to-make appetizer or side dish. They are perfect for parties, potlucks, or any other occasion. With their flakey texture, savory goat cheese flavor, and fresh chive aroma, these biscuits are sure to be a hit. So next time you're looking for a quick and tasty snack, give these goat cheese chive biscuits a try. You won't be disappointed!
