4 cloves garlic, (minced)
1 pound (500 g) uncooked potato gnocchi, ((the dry packaged gnocchi -- not fresh))
1/2 cup jarred sun dried tomato strips in oil, ((reserve 2 teaspoons of the jarred oil for cooking))

  • Season with salt and pepper to taste. Mix everything together and reduce heat to medium. Cover pan with lid and let cook for 5 minutes.

GNOCCHI WITH VODKA CREAM SAUCE

Gnocchi with Vodka Cream Sauce image

Provided by Food Network

Categories     appetizer

Time 1h45m

Yield 4 servings

Number Of Ingredients 16

9 potatoes, scrubbed
Kosher salt
2 pounds all-purpose flour
1 egg yolk
10 ounces Parmesan, grated, plus more for serving
2 tablespoons mixed finely chopped herbs (equal parts basil, chives, and parsley)
2 tablespoons mixed finely chopped herbs (equal parts basil, chives, and parsley)
2 tablespoons butter
1 tablespoon finely chopped shallots
1 tablespoon vodka
1 tablespoon heavy cream
1 cup Gabriel's Tomato Sauce, recipe follows
14 ounces canned or fresh ripe tomatoes
3 tablespoons olive oil
6 fresh basil leaves
Kosher salt and freshly ground black pepper

Steps:

  • To make the gnocchi: place the potatoes in a large pot. Cover with water. Add salt and bring the water to a boil over high heat. Reduce the heat to medium and simmer the potatoes until they are tender, about 35 minutes. Drain the potatoes. When they are just cool enough to handle, peel them then pass them through a food mill.
  • In a large bowl, mix the flour with the egg yolk, cheese and warm potatoes. Work the mixture until it becomes a smooth dough, then incorporate the herbs. Form the dough into 2 balls.
  • On a lightly floured work surface, roll each ball of dough into a 'rope' about 1/2-inch thick. Cut the 'ropes' into 3/4-inch pieces. Arrange the gnocchi on a lightly floured baking sheet. (You can freeze the gnocchi at this point and use straight from freezer.)
  • Shortly before serving, bring a large pot of salted water to boil over high heat. Reduce the heat so the water maintains an active simmer. Working in small batches, drop gnocchi into the water. Cook the gnocchi until they float 3 to 4 minutes, then remove with a slotted spoon and drain fully in a colander.
  • To make the sauce: Melt the butter in a large skillet over medium heat. Add the shallots and cook, stirring occasionally, until they soften. Add the vodka, cream, and tomato sauce, and simmer until the flavors blend, 2 to 3 minutes.
  • Immediately before serving, add the gnocchi to the sauce and heat, stirring gently to coat. Spoon the gnocchi into warm bowls and serve.
  • Puree whole tomatoes without their liquid in a food mill. Heat the oil in a large deep skillet over medium heat. Add the pureed tomatoes. Add the basil, season with salt and pepper and simmer, stirring frequently until the sauce is concentrated, about 25 minutes. Remove the basil and refrigerate or freeze until ready to use.

CHIVE GNOCCHI WITH SMOKED CREAM SAUCE & LEEKS

Chive gnocchi with smoked cream sauce & leeks image

A comforting, creamy vegetarian dish for a chilly evening. The charred leeks and spices give this recipe a great depth of flavour

Provided by Tom Kerridge

Categories     Dinner, Main course, Supper

Time 2h45m

Number Of Ingredients 16

1.2kg large Maris Piper potatoes
125g '00' pasta flour, plus extra for dusting
90g parmesan (or vegetarian alternative), finely grated, plus extra to serve
small pack chives, snipped
good grating nutmeg
1 large egg
2 large egg yolks
3 tbsp rapeseed oil
50g butter, diced
4 leeks, trimmed and sliced into rounds
1 tbsp rapeseed oil
300ml pot double cream
75g butter, cut into cubes
pinch cayenne pepper, plus extra to serve
pinch of smoked sea salt, plus extra to serve
juice 1 lemon

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the potatoes on a baking tray and bake for 1 hr 15 mins. Leave to cool slightly, then halve and scrape out the middles with a spoon. Mash the potato with a ricer (or a vegetable masher, then push through a sieve into a large bowl ). Mix in the flour, Parmesan, most of the chives (keep a few to garnish), nutmeg, egg and egg yolks and some seasoning, then knead briefly on a lightly floured surface until you get a smooth dough.
  • Divide the dough into four pieces, then use your hands to roll one piece into a long, even sausage shape. Cut into 17 equal pieces, then lightly push and roll each piece with a fork - this will shape the gnocchi and give it the traditional indentations. Divide the finished gnocchi between two trays lined with baking parchment, then repeat with the rest of the dough. Cover with cling film and chill in the fridge until needed.
  • Put the sliced leeks in a large, non-stick frying pan with the oil, turn the heat to high and fry for 8 mins, shaking the pan occasionally until the leeks are just cooked, with a charred edge, then turn off the heat.
  • For the sauce, pour the cream into a large saucepan and simmer over a medium heat for 12 mins until reduced by half. Meanwhile, bring a large pan of salted water to the boil. Cook the gnocchi in batches in the water until they float (this will take only a few mins, so keep your eye on them). Transfer to lightly oiled trays using a slotted spoon and leave to steam-dry.
  • Slowly whisk the butter into the cream, waiting until one cube has melted and combined before adding the next. Once all the butter has been incorporated, add the cayenne pepper, smoked salt and lemon juice, adjusting to taste. Set aside to keep warm.
  • To finish the gnocchi, heat a large frying pan over a medium-high heat. Add 1 tbsp oil and a third of the butter, then fry the gnocchi in three batches, adding more oil and butter between each batch, until they have a golden brown crispy exterior. Put the gnocchi in serving bowls with the charred leeks, spoon the sauce over the top and finish with the reserved chives, some grated Parmesan and a pinch of smoked salt and cayenne pepper, if you like.

Tips:

  • Use fresh ingredients: Fresh, high-quality ingredients will make a big difference in the flavor of your dish. Look for ripe tomatoes, creamy heavy cream, and flavorful Parmesan cheese.
  • Don't overcrowd the pan: When cooking the gnocchi, don't overcrowd the pan. This will prevent the gnocchi from cooking evenly and will make them more likely to stick together.
  • Cook the gnocchi until they are tender: Gnocchi should be cooked until they are tender but still slightly firm. Overcooked gnocchi will be mushy and bland.
  • Use a good quality tomato sauce: The tomato sauce is the base of this dish, so it's important to use a good quality sauce. Look for a sauce that is made with fresh tomatoes and has a rich, flavorful taste.
  • Don't overcook the smoky tomato cream sauce: The smoky tomato cream sauce should be cooked until it is heated through, but don't overcook it. Overcooked sauce will lose its flavor and become thick and gloppy.
  • Serve immediately: Gnocchi is best served immediately after it is cooked. This will ensure that the gnocchi is at its best flavor and texture.

Conclusion:

This gnocchi with smoky tomato cream sauce is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of creamy sauce, smoky tomatoes, and tender gnocchi is sure to please everyone at the table. So next time you're looking for a quick and tasty meal, give this recipe a try. You won't be disappointed!
