1 tablespoon vegetable oil
1 medium onion, diced
½ teaspoon celery seed
4 cups vegetable broth
1 (16 ounce) package fresh gnocchi
½ cup half-and-half
8 slices cooked bacon, crumbled, divided
1 cup shredded sharp Cheddar cheese, divided
2 tablespoons chopped fresh chives
salt and ground black pepper to taste

Steps:

  • Heat oil in a soup pot over medium-high heat. Add onion and celery seed. Cook until onion is soft and translucent, about 4 minutes. Pour in broth and bring to a boil. 1 small onion, diced
3 stalks celery, diced

2 carrots, shredded
1 pound cooked, cubed chicken breast
4 cups chicken broth
1 (16 ounce) package mini potato gnocchi
1 (6 ounce) bag baby spinach leaves
1 tablespoon cornstarch
2 tablespoons cold water
2 cups half-and-half cream
salt and ground black pepper to taste

1 pound boneless skinless chicken breasts, cut into 1/2-inch pieces
1/3 cup butter, divided
1 small onion, chopped
1 medium carrot, shredded
1 celery rib, chopped
2 garlic cloves, minced
1/3 cup all-purpose flour
3-1/2 cups 2% milk
1-1/2 cups heavy whipping cream
1 tablespoon reduced-sodium chicken bouillon granules
1/4 teaspoon coarsely ground pepper
1 package (16 ounces) potato gnocchi
1/2 cup chopped fresh spinach

Steps:

  • In a Dutch oven, brown chicken in 2 tablespoons butter. Remove and keep warm.
