1 medium white onion, diced
Kosher salt
2 small Italian eggplant (about 1 pound), diced
1 1/4 cups store-bought roasted garlic marinara sauce
1/4 teaspoon crushed red pepper flakes
1 1/2 ounces shredded provolone
Sprigs fresh basil or oregano, for garnish, optional

Steps:

  • Preheat the oven to 475 degrees F. Bring a large pot of water to a boil.

2 heads Broccolini (about 9 ounces total), cut into 2-inch pieces (4 cups)
14 ounces fresh or frozen gnocchi
1 1/2 cups torn cooked chicken (preferably dark meat)
3 ounces Gruyère, grated (1 cup)
2 ounces Parmigiano-Reggiano, grated (1/2 cup)
Kosher salt and freshly ground pepper

Steps:

1 egg
¾ cup Italian bread crumbs
¼ cup freshly grated Parmigiano-Reggiano cheese

1 cup freshly grated Parmigiano-Reggiano cheese

6 ounces baby bella (crimini) mushrooms, thinly sliced

Steps:

4 ounces pancetta, cubed
1 red onion, peeled and finely diced
2 garlic cloves, crushed
1 cup chopped tomato
3 tablespoons sun-dried tomato paste
1 cup mascarpone cheese
1 lb fresh gnocchi
8 -10 fresh basil leaves, finely chopped
2 cups grated mozzarella cheese
1/3 cup white breadcrumb

Steps:

  • Preheat the oven to 350°F / 180°C.
  • Heat the oil in a skillet and add the pancetta. Cook over a medium heat, stirring frequently, for 1 minute.
  • Add the red onion and garlic and cook, stirring, for a further 5 minutes, or until the pancetta is cooked and the onion softened.

24-30 frozen meatballs, thawed
1 jar (23.9 oz.) Bertolli Marinara with Parmigiano-Reggiano
