GLUTEN-FREE WHITE BREAD

Gluten-Free White Bread image

Dan Lepard's uses psyllium husk in his recipe for gluten-free bread. It turns out kinda like a french loaf. Hands down the best GF bread I've ever had.

Categories     Yeast Breads

Time 55m

Yield 12 slices, 12 serving(s)

Number Of Ingredients 13

4 teaspoons soya flour (soy flour)
50 g potato starch
300 g cornflour (cornstarch)
1 teaspoon xanthan gum
25 g psyllium husks
2 teaspoons instant yeast
1 teaspoon salt
1 tablespoon caster sugar
2 teaspoons vinegar
15 ml sunflower oil, plus extra for brushing
2 tablespoons yogurt
325 ml warm water
30 ml milk

Steps:

  • Put the dry ingredients in a bowl.
  • whisk the liquid separately.
  • then mix the two really well for a minute, until they come together into a soft dough.

  • Then, using a lightly oiled worktop and hands,
  • Shape into rolls or into a baton for a tin loaf.
  • Cover and leave for an hour and a half, until almost doubled.

  • Brush the top of the dough with oil and
  • bake for 25 minutes (rolls) or 50 minutes (large tin loaf).

BRYANNA'S GLUTEN-FREE “WHITE” VEGAN YEAST BREAD

BRYANNA'S GLUTEN-FREE “WHITE” VEGAN YEAST BREAD image

Categories     Bread     Bake     Vegetarian     High Fiber     Wheat/Gluten-Free     Healthy     Vegan

Yield 2 loaves

Number Of Ingredients 20

Yeast Mixture--mix and let stand 5 minutes:
1 3/4 c. warm water
1 packet regular active baking yeast (2 1/2 tsp.)
(NOTE: If you have only instant yeast, use only 1 3/4 tsp.)
1 tsp. sugar
Flax Mixture-- meanwhile, whiz in a blender:
1 c. warm water
1/4 c. golden flax seeds
When the mixture is frothy, with just bits of flaxseed hull in it, add and blend:
2 T. plus 2 tsp. Ener-G egg replacer powder or Orgran No-Egg
1/4 c. olive oil or melted Earth Balance
1/2 tsp. agar powder
1 1/2 tsp. vinegar
4 tsp. maple syrup, agave nectar, or brown rice syrup
Dry Mix--in a bowl, mix well:
4 c. Bryanna's Gluten-Free "White" High-Fiber Flour Mix (see mix recipe)
1/4 c. instant mashed potato flakes
6 T. unbleached organic sugar
1 T. + 1 tsp. xanthan gum or guar gum
1 T. salt

Steps:

  • Add the frothed-up Yeast Mixture to the Flax Mixture in the blender and blend briefly. Dump this into the bowl of a stand-up electric mixer. Using the whip attachment, gradually beat in the Dry Mix until it is all mixed in. Beat on high for about 3 1/2 minutes. Scrape the dough (it's actually a really thick batter) evenly into the prepared pans and smooth the tops flat. Cover and let rise in a warm place 1 to 1 1/2 hours, or level with the tops of the pans. (You can slash the top of the loaf with a sharp knife or razor blade, or not, as you prefer.) Have the oven preheated to 400 degrees F. The bread tends to stick to the pan, so you may want to use nonstick pans. Also try lining the pans or generously greasing them. Bake the breads for 20 minutes, then reduce the heat to 350 degrees F and cover the breads with loosely foil. Bake for 30 minutes more. Loosen the edges with a table knife and carefully remove the loaves from pans to a rack to cool before slicing. This really looks, smells and tastes like bread. You can toast it and make breadcrumbs or bread crumbs out of it.

GLUTEN FREE 90-SECOND WHITE BREAD

This was adapted from another microwave gluten-free bread recipe. I find this softer, lighter and has a more tender texture that doesn't dry out as fast. Plus, it is loaded with protein. This is a quick, simple recipe for one.

Time 1h

Number Of Ingredients 7

2 c rice flour
2 Tbsp sugar
3 tsp baking powder
2 large eggs
3/4 c milk
1/4 c canola oil
3/4 tsp salt

Steps:

  • 1. Mix dry ingredients :rice flour, baking powder, sugar and salt.( I used organic brown rice flour but you can substitute white rice flour).
  • 2. In separate bowl mix eggs, milk, and oil. Then mix in dry ingredients.Dough is thin, but that's how it should be.
  • 3. Grease 5 by 9 inch. loaf pan.Sprinkle with corn or rice flour.Bake in preheat oven 350 degrees 40 to 50 minutes, or until lightly brown.

Tips:

  • Mise en Place: Before you start baking, measure and gather all your ingredients and equipment. This will help you stay organized and ensure you don't miss anything.
  • Use High-Quality Ingredients: The quality of your ingredients will greatly impact the final product. Choose fresh, high-quality ingredients for the best results.
  • Activate the Yeast Properly: If you're using active dry yeast, be sure to activate it in warm water before adding it to the dough. This will help ensure the yeast is active and will work properly.
  • Knead the Dough Properly: Kneading the dough helps develop the gluten and gives the bread its structure. Knead the dough for at least 5-7 minutes, or until it is smooth and elastic.
  • Let the Dough Rise in a Warm Place: The dough needs time to rise in order to double in size. Place the dough in a warm place, such as a turned-off oven with the light on, for about 1-2 hours, or until it has doubled in size.
  • Shape the Dough Properly: Once the dough has risen, shape it into the desired shape. For a classic loaf of bread, divide the dough in half and shape each half into a long loaf. Place the loaves in greased loaf pans.
  • Let the Dough Rise Again: After shaping the dough, let it rise again for about 30-45 minutes, or until it has almost doubled in size.
  • Bake the Bread: Preheat the oven to the desired temperature before baking the bread. Bake the bread for the recommended amount of time, or until it is golden brown and sounds hollow when tapped.
  • Let the Bread Cool Completely: Once the bread is baked, let it cool completely before slicing and serving. This will help the bread retain its moisture and flavor.

Conclusion:

Baking gluten-free white bread can be a rewarding experience, and with the right ingredients and techniques, you can create a delicious and satisfying loaf of bread that everyone can enjoy. Remember to follow the tips and instructions carefully, and don't be afraid to experiment with different flavors and variations to find your perfect gluten-free white bread recipe.
