Time 20m

Yield 36 serving(s)

Number Of Ingredients 10

1 cup rice flour
1/4 cup soy flour
1/2 cup cornstarch
1/2 teaspoon salt
1 teaspoon baking powder
2 teaspoons vanilla
1/2 cup margarine or 1/2 cup butter
1/2 cup sugar, plus
1 tablespoon sugar
1 egg

Steps:

  • Mix the first 5 ingredients together in a small bowl.
  • Cream together the margarine, sugar, egg and vanilla.
  • Mix til it looks like pastry dough.
  • Add water if necessary.
  • Shape into 1 inch balls and place 3 inches apart on an ungreased cookie sheet.
  • Flatten with a moistened fork to 1/8 inch thick.
  • Bake at 375ºF for 6 to 10 min or until slightly browned.
  • Makes about 3 dozen cookies.

Tips:

  • Use good quality vanilla extract. This will make a big difference in the flavor of your wafers.
  • Be sure to cream the butter and sugar together until light and fluffy. This will help the wafers to be tender and crumbly.
  • Don't overmix the dough. Overmixing will make the wafers tough.
  • Chill the dough before rolling it out. This will help the wafers to keep their shape when baking.
  • Bake the wafers until they are just starting to brown around the edges. Overbaking will make them dry and crumbly.
  • Let the wafers cool completely before storing them. This will help them to stay crisp.

Conclusion:

These gluten-free vanilla wafers are a delicious and easy-to-make treat. They are perfect for snacking, using in desserts, or serving with coffee or tea. With their delicate flavor and crispy texture, these wafers are sure to be a hit with everyone who tries them.
