Time 30m

Number Of Ingredients 7

1 cup cornmeal
1/2 tsp salt
1 tbsp baking powder
1 pinch baking soda
1 egg
1 ¼ cup buttermilk
2 tbsp high heat oil (like refined coconut), or bacon grease for extra flavor

Steps:

  • Preheat oven to 400 F. Heat a skillet on medium high heat until hot. Add oil to a cast iron skillet and allow to heat. Keep an eye on the skillet to make sure the oil doesn't start to smoke.
  • While the pan/oil is heating, mix the dry ingredients in a bowl. In a large mug or small bowl, whisk egg and buttermilk together. If batter appears too thick, add a little more buttermilk.
  • Add wet ingredients to dry ingredients and mix until smooth.
  • When the oil starts to dance (appears to be moving in the pan), pour batter into the hot skillet and transfer to the oven. You want a super hot skillet with plenty of oil to achieve the best crispy crust. Bake for 20-25 minutes until golden brown.

Old-Fashioned Style Cornbread Recipe image

Old Fashioned Southern Cornbread made in a cast-iron skillet with buttermilk is a true Southern staple and an easy and quick gluten-free recipe!

Provided by Sharon Rigsby

Categories     Bread

Time 35m

Number Of Ingredients 7

4 tablespoons vegetable oil or bacon grease (divided (I usually use peanut oil))
2 cups coarse stone-ground cornmeal
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
2 large eggs
1-1/2 cups buttermilk

Steps:

  • Preheat the oven to 400 degrees F.
  • Add 2 tablespoons vegetable oil or bacon grease to a 10-inch cast-iron skillet. Place the skillet in the oven for five to seven minutes to heat up.
  • While the skillet is heating up, combine the cornmeal, baking powder, baking soda, and salt in a large bowl.
  • Add the eggs, buttermilk, and two tablespoons of vegetable oil or melted bacon grease to a smaller bowl and whisk until well combined.
  • Add the liquid ingredients to the dry ingredients and mix until just combined. Do not over mix.
  • Using a heavy-duty oven mitt or potholder, carefully remove the hot skillet from the oven. Tilt the skillet to make sure the bottom and sides are covered with oil. Immediately pour the batter into the skillet. You should hear a nice sizzle, and you will see the batter already start to rise.
  • Place the skillet back in the oven and bake for 20-25 minutes, or until the cornbread is a deep golden brown and has pulled away from the sides a little. To ensure it is done, insert a toothpick into the center. It should come out clean. Serve immediately.

Tips:

  • Use a good quality gluten-free flour blend. Not all gluten-free flour blends are created equal. Be sure to use a blend that is specifically designed for baking cornbread.
  • Don't overmix the batter. Overmixing the batter will make the cornbread tough. Mix just until the ingredients are combined.
  • Use fresh cornmeal. Fresh cornmeal will give your cornbread a better flavor and texture. If you don't have fresh cornmeal, you can use store-bought cornmeal, but be sure to check the expiration date.
  • Preheat your oven before baking the cornbread. This will help the cornbread to rise properly.
  • Bake the cornbread until a toothpick inserted into the center comes out clean. This will ensure that the cornbread is cooked through.
  • Let the cornbread cool slightly before serving. This will help the cornbread to hold its shape.

Conclusion:

Gluten-free cornbread is a delicious and easy-to-make side dish that can be enjoyed by people with and without gluten sensitivities. With a few simple tips, you can make gluten-free cornbread that is just as good as the traditional kind. So next time you're looking for a tasty and gluten-free side dish, give this recipe a try.
