1/2 cup Wholesome Yum Blanched Almond Flour
1/2 cup Crushed pork rinds
2 tsp Italian seasoning
1/2 tsp Garlic powder ((optional))
Oil for frying ((optional))

Steps:

  • Line a cookie sheet with parchment paper. Set aside.
  • Place coconut flour in a small bowl. Beat the egg in a second small bowl. Mix the almond flour, pork rinds, and Italian seasoning in a third bowl.
  • Dredge each piece of mozzarella in coconut flour. Dip it in the egg, shaking off the excess. Roll in the almond flour mixture until well coated, then place on the lined cookie sheet. Repeat with all the mozzarella (don't let the pieces touch on the cookie sheet).

1 large eggs (beaten)
1/4 cup almond flour
1/4 cup Parmesan cheese (the powdered kind in a can)
1 tablespoon coconut flour
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon salt (coarse Kosher salt works best)

Steps:

  • Cut string cheese in half crosswise.
  • Beat 1 egg in small bowl. Set aside.
  • Place almond flour, Parmesan cheese, coconut flour, Italian seasoning, garlic powder, and salt in zipper sandwich bag. Shake bag to blend.
  • Dip each piece of mozzarella into the beaten egg and then coat by shaking in the sandwich bag. Freeze for at least one hour.
  • Heat oil in small frying pan to at least half inch high. Temperature of oil should be about 325-375°F. Higher temperatures tend to brown too quickly with cheese melting out. Air frying works too using a temperature of about 370 to 400°F for about 5 to 7 minutes.

1 (8 ounce) package low-moisture mozzarella cheese
½ cup superfine white rice flour
2 egg whites
1 egg
1 cup gluten-free bread crumbs
1 tablespoon dried oregano

Yes, Virginia, there is such thing as a gluten-free fried mozzarella stick that tastes just like the "real thing"! These are so very tasty. Many thanks to Zaar user "GlutenFreeGirl" for her input and help with this recipe. IF YOU'RE GLUTEN-FREE: Be sure to use a GF flour with a very fine consistency (no almond meal, corn meal, etc). "Recipe #201072" works perfectly. For bread crumbs, I used Ener-G's Fine Bread Crumbs - Other GF brands available include Miss Roben's, Gillian's Foods and El Peto. This is definitely a job for fine, dry breadcrumbs rather than fresh ones. If you can get your hands on gluten-free Italian flavored bread crumbs, then eliminate all of the herbs and spices that the recipe calls for. IF YOU CAN EAT GLUTEN: Just use regular breadcrumbs and regular flour (same measurements). Bon appetit!
