BOB'S RED MILL EASY GLUTEN FREE BANANA BREAD

Bob's Red Mill Easy Gluten Free Banana Bread image

This comes from the back of Bob's Red Mill All Purpose GF Flour packaging. It's a quick and easy recipe. The bread is especially good toasted with butter! I have substituted 1/2 almond meal and 1/2 white rice flour for the all purpose flour, and just about any combination of GF flours seems to work. I always leave out the raisins & nuts, too.

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your banana bread will be. Overripe bananas also do an excellent job of binding the ingredients together, resulting in a moist and fluffy loaf.
  • Use a combination of flours: This recipe uses a combination of gluten-free flour and almond flour. This results in a light and airy loaf that is still moist and flavorful.
  • Don't overmix the batter: Overmixing the batter will result in a tough, dense loaf of banana bread. Mix just until the ingredients are combined.
  • Bake the bread at a moderate temperature: A moderate temperature will help the bread to rise evenly and prevent it from becoming overcooked.
  • Let the bread cool completely before slicing: This will help the bread to set and prevent it from crumbling.
  • Store the bread in an airtight container: Banana bread can be stored at room temperature for up to 2 days, or in the refrigerator for up to 1 week.

Conclusion:

This gluten-free banana bread is a delicious and easy-to-make treat that is perfect for breakfast, lunch, or a snack. It is also a great way to use up ripe bananas. With its moist and fluffy texture, and delicious banana flavor, this bread is sure to be a hit with everyone.
