1/2 cup unsweetened baking cocoa
1 1/2 teaspoons baking soda
1/2 teaspoon gluten-free baking powder
1/2 teaspoon xanthan gum
1/2 teaspoon salt
1/2 cup butter, softened
1 cup packed brown sugar
1/2 teaspoon gluten-free vanilla
2 eggs
1 1/2 cups powdered sugar
1/2 cup butter, softened
1 teaspoon gluten-free vanilla
2 to 3 tablespoons whipping cream

Steps:

  • Heat oven to 350°F. Line cookie sheet with cooking parchment paper.
  • In medium bowl, stir together flour blend, cocoa, baking soda, baking powder, xanthan gum and salt; set aside.

2 cups unsalted butter
3 cups sugar
4 cups gluten-free high quality cocoa
2 tablespoons gluten-free vanilla extract
5 teaspoons gluten-free baking powder
4 teaspoons gluten-free ground cinnamon
1/2 teaspoon salt
4 eggs
1/2 cup icing sugar

Steps:

  • For the ganache: Heat the cream in a saucepan, but do not bring to a boil. Add the icing sugar and stir until smooth. Remove from the heat and add the white chocolate, stirring until the chocolate is well blended and melted. Refrigerate overnight before using. For the cookie dough: Preheat the oven to 375 degrees F.
