2 tablespoons brown rice flour
4 tablespoons brown sugar
1 tablespoon canola oil

1/3 cup chopped pecans or 1/3 cup blanched slivered almond, crushed
1/2 cup rice flour (white)
1/2 cup brown rice flour
1/3 cup tapioca starch
3/4 teaspoon guar gum (xanthan gum may be substituted ~ corn derived)
1 teaspoon baking soda
1 1/2 teaspoons gluten free baking powder
1 teaspoon cinnamon
2 teaspoons vanilla
1/2 cup canola oil
3/4 cup dark brown sugar
2 egg replacer eggs
4 tablespoons orange juice
1 1/2 cups chopped apples (about 2 apples)

Steps:

  • Preheat oven to 325°F.
  • Prepare a small deep pan by greasing and dusting with white rice flour.
  • Mix all strudel ingredients in a small bowl and set aside.
  • In a medium bowl, sieve together all the dry ingredients. (except strudel and apples).
  • Add the wet ingredients and mix with a wooden spoon.
  • Add the chopped apples and stir to combine.
  • Scoop half the batter into the prepared pan.
  • then layer half the strudel mixture on top of the batter.
  • Add remaining batter and then remaining topping.
  • Place in the oven and bake approximately 1 hour, or until a toothpick inserted in the center comes out clean.

4 ounces cream cheese, softened
2 tablespoons butter, softened
4 -5 teaspoons pure maple syrup
1 lb powdered sugar

Steps:

  • Preheat to 350°F.
  • Grease a 9-inch springform pan.
  • In a large bowl, beat the eggs.
  • Add oil, applesauce, brown sugar, maple syrup, vanilla, and cinnamon; beat well.
  • Stir in baking mix.

1 teaspoon lemon juice

1/4 cup almond flour or coconut flour
1 cup, plus 2 tablespoons organic granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon xanthan gum, omit if your flour blend already contains it
1 large egg plus 2 large yolks
1 cup canola oil or coconut oil
1 cup whole milk, or dairy free milk of your choosing
1 teaspoon gluten free vanilla extract

Steps:

  • Directions Place the oven rack in the lower third of the oven and set the temperature to 325 degrees. Spray a 9-inch springform pan with gluten-free cooking spray and place on a foil lined, rimed baking sheet. Place apple slices on a microwave safe plate or pie dish, cover and microwave on high for 3 minutes, or until apples are slightly tender and pliable. This is a bit of a work in progress. I made this cake up because I had apples to use up and was craving something chocolate-y. It's quickly made with ingredients which I usually have on hand, and it tastes pretty good, but it's not five-star-terrific yet. So if you choose to try it and come up with suggestions to improve it, I'd be very grateful! I used erythritol in place of sugar, but of course you can use sugar or xylitol. I think half brown sugar or evaporated cane juice would be very good, too. With 2/3 cup sugar it's probably not very sweet, so if you're sweet toothed, use 3/4 cup of sugar or other sweetener. Don't overbake it or it will get dry. I found that the toothpick should not come out completely clean. The cake is ready when it feels soft and springy pressing the top slightly, 35 minutes in my oven.

45 g butter
200 g sugar
3 eggs
100 g milk
150 g almond meal
2 teaspoons baking powder (gluten free)

  • Cut apples into quarters, core and then slice very very thin, about 3mm per slice. Set aside.
  • Heat butter 1 minute/50 degrees/speed 1.
