Spiced almond flour and cornstarch for a crispy, gluten-free coating for fried chicken.

Provided by Food Network Kitchen

Time 45m

Yield 4

Number Of Ingredients 12

1 cup almond flour
1 cup cornstarch
2 teaspoons granulated garlic
2 teaspoons sweet paprika
2 teaspoons chopped thyme
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
1 cup buttermilk
4 skinless, bone-in chicken drumsticks
4 skinless, bone-in chicken thighs
2 cups peanut oil, for frying
1 lemon, cut into wedges

Steps:

  • Whisk together the almond flour, cornstarch, garlic, paprika, thyme, cayenne, 1 tablespoon salt and 1/2 teaspoon black pepper in a shallow dish. Pour the buttermilk into another dish. Dredge the chicken pieces in the almond flour mixture, dip in the buttermilk and then dredge again in the flour mixture. Place the chicken on a rimmed baking sheet and refrigerate for 5 to 10 minutes.
  • Heat the oil in a 12-inch cast-iron skillet over medium-high heat until some flour dropped in turns golden right away. Add the chicken, reduce the heat to medium-low and fry until deep golden brown and cooked through to an internal temperature of 165 degrees F, about 18 minutes, turning every few minutes. Remove the chicken to a cooling rack or paper towels to drain. Season with salt and pepper. Serve with lemon wedges.

Time 55m

Number Of Ingredients 13

2 pounds blueberries (that's 32 ounces, which is about 5 cups or a little less than 3 pints), fresh or frozen*
1/3 cup maple syrup or honey
2 tablespoons arrowroot starch or 3 tablespoons cornstarch
1/2 teaspoon lemon zest (less than 1 small lemon, zested-scale back to 1/4 teaspoon zest if you don't love lemon)
2 tablespoons lemon juice (from 1 to 2 lemons)
1/4 teaspoon cinnamon
1 cup old-fashioned oats (certified gluten-free for a gluten-free crisp)
1/2 cup packed almond meal or almond flour
1/2 cup sliced almonds
1/3 cup lightly packed brown sugar
1/4 teaspoon fine grain sea salt
4 tablespoons butter, melted
3 tablespoons plain yogurt (Greek or regular), or additional melted butter

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Rinse and drain the blueberries and pick through them to remove any stems still attached. In a 9 by 9-inch baking dish, mix together the blueberries, maple syrup or honey, arrowroot or cornstarch, lemon zest, lemon juice and cinnamon.
  • In a medium mixing bowl, stir together the oats, almond meal/flour, sliced almonds, brown sugar and salt. Mix in the butter and yogurt. Stir until all of the flour is incorporated and the mixture is moistened throughout.
  • Dollop spoonfuls of the oat mixture over the filling and use your fingers to break up the mixture until it is evenly distributed (no need to pack it down).
  • Bake for 40 to 50 minutes, or until the filling is actively bubbling around the edges and the top is lightly golden. Let the crisp rest for 5 to 10 minutes before serving. Serve with vanilla ice cream (I insist!).

Time 30m

Yield 6 serving(s)

Number Of Ingredients 11

4 cups apples, peeled & sliced, such as Granny Smiths
1 tablespoon sugar
2 tablespoons water
1 teaspoon cornstarch
1 teaspoon ground cinnamon
1 pinch nutmeg
1/2 cup almond flour
1/2 cup certified gluten free old fashioned oats
1/4 cup brown sugar
1 teaspoon cinnamon
2 tablespoons softened unsalted butter

Steps:

  • Preheat the oven to 350. Coat a pie dish with cooking spray. In a large bowl, toss together the apples, sugar, water, cornstarch, 1 teaspoons cinnamon, and nutmeg until well combined. Set aside.
  • Make the oatmeal topping: In a bowl, gently combine: almond flour, oats, brown sugar, 1 teaspoons cinnamon, and butter until crumbly.
  • Place the apple mixture in the dish. Sprinkle the topping evenly over the apples and bake for 25 to 30 minutes, until the apples are cooked through, the juices are bubbling, and the topping is browned. Serve, hot, warm, or at room temperature.

Tips:

  • Use almond flour: This is the key ingredient in these gluten-free almond crispies, and it gives them their characteristic texture and flavor.
  • Don't overmix the batter: Overmixing will make the cookies tough. Mix just until the ingredients are combined.
  • Chill the dough before baking: This will help the cookies hold their shape and prevent them from spreading too much.
  • Bake the cookies until they are golden brown: This will ensure that they are cooked through.
  • Let the cookies cool completely before serving: This will help them to set and firm up.

Conclusion:

These gluten-free almond crispies are a delicious and easy-to-make treat. They are perfect for a snack or dessert, and they can also be used to top cakes, cupcakes, or ice cream. With their simple ingredients and straightforward instructions, these cookies are sure to be a hit with everyone who tries them.
