8 ounces medium pasta shells
3 tablespoons unsalted butter
1 small onion, chopped
1 tablespoon tomato paste
1 tablespoon chili powder
8 ounces ground beef
2 tablespoons all-purpose flour
1 cup low-fat (1 percent) milk
2 1/2 cups shredded Mexican cheese blend (about 8 ounces)
2 tablespoons breadcrumbs (preferably panko)
2 scallions, thinly sliced

Steps:

  • Bring a pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 3/4 cup of the cooking water, then drain the pasta. Meanwhile, melt 1 tablespoon butter in a large nonstick skillet over medium heat. Add the onion and cook, stirring, until soft, about 5 minutes. Add the tomato paste and chili powder and stir until brick red, about 2 minutes. Add the beef and cook, stirring, until browned, 4 minutes. Stir in 1/2 teaspoon salt. Spread the mixture in a 3-quart flameproof baking dish. Preheat the broiler. Melt the remaining 2 tablespoons butter in a pot over medium heat. Add the flour and cook, stirring, 1 minute. Add the milk and reserved cooking water, bring to a simmer and cook, whisking, until thick, 2 minutes. Add 2 cups cheese, the cooked pasta and 3/4 teaspoon salt and stir until the cheese melts. 2 (7 1/4 ounce) boxes Kraft macaroni and cheese
4 cups water
1 teaspoon salt
1/4 cup butter
1/2 lb ground beef
1 cup evaporated milk
1 cup spaghetti sauce
1 teaspoon sugar
1/2 cup grated cheese

  • Put macaroni on to cook in 4 cups water, salt and 1 tablespoon butter.
  • Cook rapidly in open kettle, stirring often. The butter will keep it from sticking or boiling over.

1 medium onion, chopped

1 lb lean ground beef

  • Cook macaroni in large pot of boiling salted water until done; drain.

  • Brown meat and onion.

1/2 cup milk
3 tablespoons butter (heaping tablespoons)
1 cup cheddar cheese
1/8 teaspoon black pepper (to taste)
1/8 teaspoon salt (to taste)
1/8 teaspoon granulated garlic powder (to taste)
1 lb ground beef (lean)
1 cup elbow macaroni
1 cup tomatoes (diced)

Steps:

  • In a large pot on medium-high heat, bring 2 quarts of salted (1 teaspoons salt) water to a boil.
  • Add macaroni to boiling water and cook until tender.
  • Drain off the water from the macaroni.
  • On low heat add butter, milk and cheese. Stir until cheese is melted.
  • Remove from heat and set aside.
  • In a deep skillet on medium heat cook the ground beef, salt, pepper and garlic powder until the ground beef is no longer pink, making sure that the ground beef is finely broken up.

This is a dish that my mother made when she needed to fix something quick or just because we liked it so well.

1 pkg large elbow macaroni or any pasta 8-12 oz
1 lb ground chuck
1 can(s) diced tomatoes
1-2 can(s) tomato sauce 8 oz
1/4-1/2 tsp oregano leaves, optional
salt and pepper to taste
1 c cheddar cheese, shredded

Steps:

  • 1. In saucepan cook macaroni per package directions. Basically, bring salted water to boil; add macaroni and cook until tender about 7-10 minutes. Drain.
  • 2. In the meantime, brown ground chuck that has been seasoned with salt and pepper. Cook until done then drain. Note: I use a large iron skillet.
  • 3. Add the tomatoes and tomato sauce to ground beef Add oregano leaves, if desired. Stir in cooked macaroni and let simmer about 20 minutes. Stirring occasionally. Remove from heat and top with shredded cheese.
