Provided by Erin Clarke / Well Plated

Time 30m

Number Of Ingredients 13

8 ounces whole-wheat linguine
1 pound fresh or frozen raw shrimp (peeled, tails removed (if frozen, thaw in the refrigerator overnight before using))
2 tablespoons extra-virgin olive oil (divided)
1 shallot (peeled and diced)
5 cloves garlic (minced)
1/2-1 teaspoon crushed red pepper flakes (divided (use less if sensitive to spice; 1 teaspoon will have a good kick))
1 teaspoon kosher salt (divided)
1 teaspoon black pepper (divided)
24 ounces mixed vegetables ( of your choice, fresh or frozen. If frozen, thaw and drain)
1/4 cup dry white wine (such as Sauvignon Blanc (or substitute low-sodium chicken broth))
Zest and juice of 1 large or 2 small lemons
3 tablespoons freshly grated Parmesan cheese (plus additional as desired)
2 tablespoons chopped fresh parsley (plus additional as desired)

Steps:

  • Bring a large pot of salted water to a boil and cook the pasta until al dente, according to package directions. Reserve 1/4 cup pasta water, drain remaining water, and then toss with a bit of olive oil to prevent sticking. Set aside.
  • Meanwhile, rinse the shrimp and pat dry. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the shallot and cook until fragrant, about 2 minutes. Add the garlic and cook 1 additional minute. Add the shrimp, and then sprinkle with half the amount of red pepper (1/4 or 1/2 teaspoon depending upon your desired spice level), 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Sauté, stirring to coat with garlic, just until cooked through (both sides will be pink and opaque), about 3 to 4 minutes. Remove to a plate and set aside.
  • Heat the remaining 1 tablespoon olive oil over medium high. Add the vegetables and the remaining 1/4 or 1/2 teaspoon red pepper, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Cook until the vegetables are hot and lightly sautéed, 4 to 5 minutes. Add the white wine and return the shrimp to the skillet. Cook for 2 minutes, allowing the wine to reduce. Stir in the lemon zest and juice and remove from heat.
  • Add the pasta to the skillet and toss. If the pasta is too dry, add a bit of the reserved pasta water. Serve warm, topped with Parmesan and parsley.

ONE-POT SPANISH-STYLE SHRIMP AND CHORIZO PASTA

One-Pot Spanish-Style Shrimp and Chorizo Pasta image

Fideos are very thin noodles that are traditionally cooked right in the sauce, allowing them to soak up maximum flavor. Both angel hair pasta and capellini are great substitutes if you don't have access to Spanish fideos. To create a nutty, smoky layer, the noodles are first toasted with olive oil and chorizo. A good-quality bottled clam juice is important here, since it creates the briny broth that accentuates the shrimp and enhances the overall seafood flavor; the Bar Harbour brand has a very clean and naturally briny clam flavor.

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 15

1/4 cup extra-virgin olive oil, plus more for drizzling
1/2 cup finely chopped onion
8 ounces fideos, angel hair pasta or capellini, broken into 3-inch pieces
Kosher salt and black pepper
3 garlic cloves, minced
2 tablespoons tomato paste
4 ounces Spanish chorizo, casing removed and sliced 1/2-inch thick
1 medium fennel bulb, trimmed, quartered and sliced into thin wedges
2 (8-ounce) bottles clam juice
1 pound large shrimp, cleaned
1/2 cup frozen peas
1/4 cup freshly grated Parmesan
1 tablespoon lemon juice
1/4 cup chopped parsley
Lemon wedges, for serving

Steps:

  • Heat oil in a large Dutch oven over medium heat. Add onion and pasta, season with salt and pepper and cook over moderate heat, stirring, until pasta starts to turn golden, about 5 minutes (pasta will break up a bit during stirring).
  • Lower heat and add garlic, tomato paste and chorizo, and cook until tomato paste is lightly caramelized, 2 to 3 minutes. Add fennel, clam juice and 1 cup of water and season with salt and pepper. Bring to a boil, cover and simmer over moderate heat until pasta has softened and most of the liquid is absorbed, about 5 minutes.
  • Stir in shrimp, peas and Parmesan, cover and cook until shrimp is opaque, about 3 to 4 minutes. Stir in lemon juice and parsley.
  • Drizzle with oil and serve with lemon wedges.

Yield About 8 servings according to the size glass you u

Number Of Ingredients 10

Small precooked shrimp
2 cups Ketchup
2 cups apple juice
1 Tablespoon Salsa like Valentina
1/2 to 1 teaspoon Tabasco Sauce
Diced avocado
minced onion
chopped cilantro leaves
diced tomatoes
saltine crackers

Steps:

  • Mix all the liquid ingredients well. Using a Sundae glass or stemware, fill glass with shrimp leaving room for other ingredients. Ad enough cocktail liquid to barely cover the shrimp. Add 1 to 2 Tbsps each: Avocado, cilantro, Onion and Tomato. Serve with salted crackers

Tips:

  • Use fresh, large shrimp. Smaller shrimp can be difficult to devein and clean, and they don't have as much flavor as larger shrimp.
  • Devein and clean the shrimp properly. This will help to remove any grit or sand from the shrimp, and it will also make them more visually appealing.
  • Cook the shrimp until they are just opaque. Overcooked shrimp are tough and chewy.
  • Use a good quality olive oil. Extra virgin olive oil is the best choice, but you can also use a lighter olive oil if you prefer.
  • Don't overcrowd the pan when cooking the shrimp. This will prevent them from cooking evenly.
  • Add the shrimp to the pasta at the end of the cooking time. This will help to prevent them from overcooking.
  • Serve the pasta immediately. This is when it is at its best.

Conclusion:

Gloria's shrimp pasta is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of shrimp, pasta, and vegetables is flavorful and satisfying, and the creamy sauce is the perfect finishing touch. If you are looking for a new pasta recipe to try, I highly recommend this one.
