GLORIA PITZER'S FAMOUS DAVE'S-STYLE SECRET BBQ SAUCE

Gloria Pitzer's Famous Dave's-Style Secret BBQ Sauce image

Gloria Pitzer is known for copying famous foods, but making them healthy at the same time. "I take the junk out of junk food," says Pitzer. "You know what goes into my recipes." Gloria is careful to point out that she doesn't actually know what the big chains put in their food. "I don't try to dissect the foods and figure out the chemical ingredients," she says. "I never, ever try to steal anyone's secret corporate recipe. I just do my best to duplicate the taste." I have to admit that we don't have a Famous Dave's in Canada, but this is a great sauce. Enjoy!

DADDY'S SECRET BBQ SAUCE

Daddy's Secret BBQ Sauce image

This recipe is a secret. I actually stole it from my mom's recipe box. So...I thought why not post it for everyone to enjoy. It is thin and drippy, but it's one of those vinegar-based sauces and worth a try if you like those sort of toppings. Had it with a roasted pig (yummy in my tummy) and ate till I was sick. This recipe makes a gallon, so if you don't want or need that much, scale this down.

GLORIA PITZER'S OLIVE GARDEN-STYLE SALAD DRESSING

Gloria Pitzer is known for copying famous foods, but making them healthy at the same time. "I take the junk out of junk food," says Pitzer. "You know what goes into my recipes." Gloria is careful to point out that she doesn't actually know what the big chains put in their food. "I don't try to dissect the foods and figure out the chemical ingredients," she says. Time 15m

Yield 2 cups, 6-8 serving(s)

Number Of Ingredients 11

1 1/2 cups Italian dressing, bottled
2 tablespoons parmesan cheese, grated
2 tablespoons sugar (or equivalent in artificial sugar)
1 large egg, raw (or egg beaters to equal 1 egg)
2 tablespoons mayonnaise
1/4 cup oil
fresh spinach
iceberg lettuce
romaine lettuce
onion, cut into rings
radish, etc

Steps:

  • Blend first 5 ingredients (not oil) in blender on high speed 1/2 minute or until smooth. Pour this mixture into the top of a double boiler and add 1/4 cup oil. Stir gently with a whisk over gently boiling water until it begins to thicken and egg is completely cooked. Chill several hours or overnight before using. If the dressing is too thick, add more Italian dressing as needed.
  • Mix together equal amounts of fresh spinach, iceberg and romaine lettuce. Allow 2 cups for each salad. Moisten leaves in dressing, do not saturate; let stand 5 minutes. Add onion rings, radishes, etc.

Tips:

  • Use ripe, fresh tomatoes. This will give your sauce a richer flavor.
  • Roast your tomatoes. Roasting tomatoes intensifies their flavor and gives them a slightly smoky taste.
  • Use a variety of spices. This will give your sauce a complex flavor profile.
  • Don't be afraid to experiment. There are endless possibilities when it comes to making BBQ sauce.
  • Let your sauce simmer for a while. This will allow the flavors to meld together and develop.
  • Taste your sauce as you go. This is the best way to ensure that it's seasoned to your liking.

Conclusion:

Making your own BBQ sauce is a great way to add a personal touch to your grilled dishes. With a little experimentation, you can create a sauce that's perfect for your taste. So fire up the grill and get started!
