4 bone-in center-cut pork chops (about 1 3/4 pounds total)
2 tablespoons honey
4 small sweet potatoes (about 8 ounces each)

4 1/2 tablespoons all-purpose flour
1/4 cup pure maple syrup
4 pounds sweet potatoes
3 tablespoons unsalted butter, softened

  • Preheat oven to 350°F. Pat pork dry and season generously with salt and pepper. Sprinkle center of a flameproof roasting pan with 1/2 tablespoon flour. Set pork on flour in pan and roast in middle of oven 40 minutes.
