Steps:
- Bring a large pot of salted water to a boil. Meanwhile, season the pork chops on both sides with salt and the paprika. Melt 1 tablespoon butter in a large skillet over medium-high heat. Add the pork chops and cook until browned, adjusting the heat as needed so the butter doesn't get too dark, about 2 minutes per side. Remove the pork to a plate.
- Add the apples and shallots to the skillet. Cook, tossing, until lightly browned, about 3 minutes. Move the apples and shallots to one side of the skillet and add the tomato paste to the other side. Cook the tomato paste, stirring, until it darkens slightly, about 1 minute. Add the vinegar, honey and thyme, then stir in 1 cup of the boiling water from the pot. Bring to a simmer and cook until the apples are tender and the sauce thickens, 8 to 10 minutes. Add a little more water, if needed.
- Meanwhile, add the pierogi to the pot of boiling water and cook as the label directs. Remove with a slotted spoon and transfer to the skillet; nestle the pork chops in the mixture. Cut the remaining 1 tablespoon butter into small pieces and stir into the sauce. Cook, stirring, until the pierogi are coated in the sauce and the pork is just cooked through, about 2 minutes. Divide among plates. Top with chives.

PORK CHOPS WITH APPLE CIDER GLAZE
Pork chops with a glossy apple cider glaze is really easy, and while there's no starch or extra butter involved, it reduces quickly to a thick, rich, sweet-tart apple syrup.

GLAZED PORK CHOPS AND APPLE BAKE
This is a delicious, very easy way to bake pork chops. I've found that some people like to also eat the apples that are cooked along with it, some prefer the pork chops and sauce without the apples. But don't leave them out because they are part of what create the resulting sauce, which is absolutely fantastic!!! The recipe is an old one from French's Worcestershire Sauce

Tips:
- For a crispy crust on your pork chops, sear them in a hot skillet before baking.
- Use a meat thermometer to ensure that the pork chops are cooked to your desired doneness. The recommended internal temperature for pork chops is 145°F (63°C) for medium-rare, 155°F (68°C) for medium, and 165°F (74°C) for well done.
- To make a flavorful glaze, use a combination of spices, herbs, and liquids. Some popular options include apple cider, maple syrup, brown sugar, Dijon mustard, and thyme.
- Apples are a great addition to this dish, as they add sweetness and tartness. You can use any type of apple you like, but Granny Smith apples are a good choice because they hold their shape well when baked.
- Serve the pork chops and apples with your favorite sides, such as mashed potatoes, roasted vegetables, or rice.
