Yield Makes 36 cookies

Number Of Ingredients 9

2 3/4 cups all-purpose flour (spooned and leveled)
1 tablespoon baking powder
1/4 teaspoon fine salt
1 cup (2 sticks) unsalted butter, room temperature
1 1/2 cups granulated sugar
2 tablespoons grated orange zest, plus 2 tablespoons juice (from 2 oranges)
4 teaspoons grated lemon zest, plus 3 tablespoons juice (from 2 lemons)
2 large eggs
2 1/2 cups confectioners' sugar, sifted

Steps:

  • Preheat oven to 350 degrees, with racks in upper and lower thirds. Whisk together flour, baking powder, and salt. In a bowl of an electric mixer fitted with the paddle attachment, combine butter, granulated sugar, 1 tablespoon orange zest, and 2 teaspoons lemon zest and beat on medium-high until pale and fluffy, 3 minutes, scraping down bowl as needed. Beat in eggs, one at a time. Add flour mixture; beat to combine.
  • Roll dough into 1-inch balls and place, 2 inches apart, on parchment-lined baking sheets. Bake until edges are lightly golden, 12 to 15 minutes, rotating sheets halfway through. Let cool on sheets on wire racks 5 minutes, then transfer cookies to racks and let cool completely.

Time 2h40m

Yield about 24 cookies

Number Of Ingredients 11

2 cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature
1 1/4 cups granulated sugar
1 1/2 tablespoons finely grated citrus zest (orange, lemon, lime or grapefruit)
2 large egg yolks
3/4 teaspoon lemon extract
1/4 teaspoon orange extract
1 cup confectioners' sugar, sifted
2 to 3 tablespoons fresh citrus juice (use the same kind as the zest)

Steps:

  • Whisk the flour, baking soda and salt in a medium bowl. Beat the butter in a large bowl with a mixer on medium-high speed until smooth. Add the granulated sugar and 1 tablespoon citrus zest and beat until light and fluffy, about 2 minutes. Beat in the egg yolks, one at a time, then beat in the lemon and orange extracts. Reduce the mixer speed to low; add the flour mixture and beat until a soft dough forms.
  • Line 2 baking sheets with parchment paper. Scoop rounded tablespoonfuls of dough about 2 inches apart onto the prepared baking sheets. Freeze at least 30 minutes or overnight.
  • Preheat the oven to 375 degrees F. Bake the cookies straight from the freezer, 1 baking sheet at a time, until the edges are set and the bottoms are lightly browned, 15 to 17 minutes. Let cool 3 minutes on the baking sheet, then transfer to a rack to cool completely.
  • Meanwhile, make the glaze: Whisk the confectioners' sugar, 2 tablespoons citrus juice and the remaining 1/2 tablespoon zest in a medium bowl until thick and smooth. (Add 1 more tablespoon citrus juice if the glaze is too thick.) Spread on the cookies; transfer to a rack and let set, about 1 hour.

Categories     Cookies

Time 25m

Number Of Ingredients 9

2 3/4 c all purpose flour (spooned and leveled)
1 Tbsp baking powder
1/4 tsp fine salt
1 c butter (2 sticks) unsalted at room temperature
1 1/2 c granulated sugar
2 Tbsp grated orange zest plus 3 tbs juice (2 oranges)
4 tsp lemon zest, plus 3 tbs juice (2 lemons)
2 large eggs
2 1/2 c confectioners' sugar

Steps:

  • 1. Preheat oven 350F, with racks in upper lower thirds. Whisk together flour, baking powder, and salt. In a large bowl, using and electric mixture, beat butter, granulated sugar, 1 tablespoon orange zest, and 2 teaspoon lemon zest on medium-high until pale and fluffy, 3 minutes, scraping down bowl as needed. Beat in eggs one at a time. Add flour mixture; beat to combine.
  • 2. Roll dough into 1-inch balls and place 2 inches apart, on parchment-lined baking sheets. Bake until edges are lightly golden, 12-15 minutes, rotating sheets halfway through. Let cool on sheets on wire racks 5 minutes, then transfer cookies to racks and let cool completely.
  • 3. Whisk together 1 tbs orange zest, 2 tsp lemon zest, citrus juices, and confectioners' sugar until smooth. With a small spoon, spread glaze over each cookie. Let set for 1 hour.

Tips:

  • Zest the citrus fruits before juicing them. This will add a burst of flavor to your glaze.
  • Use fresh citrus juice. Bottled juice will not have the same flavor or aroma.
  • Make sure your butter is cold before adding it to the glaze. This will help the glaze thicken.
  • Don't overcook the glaze. It should be thick and syrupy, but not too thick.
  • Brush the glaze on the cookies while they are still warm. This will help the glaze soak into the cookies.
  • Let the cookies cool completely before storing them. This will help the glaze set.

Conclusion:

Glazed citrus doodles are a delicious and easy-to-make treat that are perfect for any occasion. With a few simple ingredients, you can create a dessert that is both flavorful and visually appealing. So next time you're looking for a sweet treat, give these glazed citrus doodles a try!
