Kosher salt
1 head of garlic, halved crosswise, plus 4 cloves, thinly sliced
1 1/2 lb. carrots, scrubbed, cut in half
8 small shallots, peeled
1 (2") piece ginger, unpeeled, thinly sliced
2 Tbsp. unsalted butter
1 Tbsp. honey
2 Tbsp. extra-virgin olive oil
1 tsp. crushed red pepper flakes
1/4 cup fresh lime juice
