MOLASSES GLAZED CARROTS
This recipe produces fabulous sweet & sour carrots. The molasses lends a real depth and complexity of flavour. Recipe is from Bon Appétit Magazine (December 2008). I think it would work really well with parsnips too.

Tips:
- Choose the right carrots: For the best results, use fresh, young carrots that are about the same size. This will ensure that they cook evenly.
- Trim the carrots: Before cooking, trim the carrots by cutting off the tops and bottoms. You can also peel the carrots if desired, but this is not necessary.
- Glaze the carrots: To make the glaze, combine molasses, water, butter, salt, and pepper in a saucepan. Bring to a simmer over medium heat, stirring occasionally. Add the carrots and cook until they are tender and coated in the glaze.
- Add marjoram: For extra flavor, add a few sprigs of fresh marjoram to the glaze. This herb pairs well with carrots and adds a subtle, earthy flavor.
- Serve immediately: Glazed carrots are best served immediately. They can be enjoyed as a side dish or as a snack.
Conclusion:
Glazed carrots with molasses and marjoram are a delicious and easy-to-make side dish. They are perfect for any occasion, from weeknight dinners to holiday feasts. The molasses adds a sweet and sticky glaze to the carrots, while the marjoram adds a subtle, earthy flavor. These carrots are sure to be a hit with everyone at your table.
