GLAZED CARROTS WITH THYME
Cooking carrots in a bit of water, butter, and sugar brings out their delicate flavor and coats them with a thin glaze. Instead of baby carrots, you can substitute medium carrots, cut into thin slices. Dill or parsley would work here as well.

Steps:
- Bring a pot of well-salted water to a boil. Set up a bowl of well-salted ice water. Blanch the carrots in the boiling water. When they are cooked but still have some crunch, plunge them immediately into the ice water. When cool, use a clean tea towel to rub the skin off the carrots. Reserve.
- To a large skillet add the butter, sugar, lemon juice, garlic, thyme, cayenne and about 1/2 cup of water. Bring the pan to medium heat swirling occasionally. When most of the water has reduced and the mixture seems homogenous, removed the garlic and add the carrots and stir until they are coated. Cook for another 2 to 3 minutes or until the carrots are completely coated and hot.
- So good for my eyes!

GLAZED BABY CARROTS WITH THYME
This is adapted from one of Canadian LIving's Best Recipes Ever. It is a lot faster to make than some of the slow cooked glazed carrot recipes. We had these for dinner one night with rice, peas and sweet & sour ribs. They would be great to serve dinner guests. They will think you spent ages working on the dish, when in reality you only need to stir them several times near the end of cooking. If you have children who will look at the carrots & say "What are those funny leaves in there? I AM NOT EATING THAT" just leave the thyme out. You could use dried thyme leaves or ground thyme if you want to, just reduce the amount to about 1/2 tsp ground, or 3/4 - 1 tsp dried leaves. I think this would be great with some lemon thyme in the summer. If you use fresh thyme, garnish your serving dish with a whole sprig of thyme. I hope you enjoy them.

Steps:
- Rinse carrots & combine everything but thyme in a stainless steel or nonstick frying pan.
- Bring to a boil, cover & reduce heat to medium.
- Cook about 10 minutes, water should be evaporated & carrots tender.
- Stir carrots seveeral times for about 5 - 10 minutes (5 for glazed, 10 for lightly browned) I left the lid on between stirring.
- Remove from heat, stir in thyme & serve.
Tips:
- Select tender baby carrots: Choose small, uniform carrots with smooth skin and no blemishes. Avoid large or thick carrots, as they may take longer to cook and may not be as tender.
- Prepare the carrots properly: Scrub the carrots well under running water to remove any dirt or debris. Trim the tops and bottoms of the carrots, leaving about 1 inch of the green tops intact.
- Use fresh thyme: Fresh thyme adds a delicate, earthy flavor to the carrots. If you don't have fresh thyme, you can use 1/2 teaspoon of dried thyme.
- Don't overcrowd the pan: When roasting the carrots, make sure to spread them out in a single layer on the baking sheet. Overcrowding the pan will prevent the carrots from cooking evenly.
- Roast the carrots until tender: The carrots should be tender when pierced with a fork. Roasting time may vary depending on the size and thickness of the carrots, so check them frequently towards the end of the cooking time.
- Make the glaze while the carrots are roasting: This will help you save time and ensure that the glaze is ready when the carrots are done.
- Use a good quality olive oil: The olive oil you use will make a big difference in the flavor of the carrots. Choose a flavorful extra virgin olive oil for the best results.
- Season the carrots to taste: Once the carrots are roasted, season them with salt and pepper to taste. You can also add a sprinkle of fresh thyme or other herbs for extra flavor.
Conclusion:
Glazed baby carrots with thyme are a delicious and easy-to-make side dish that can be enjoyed as part of a weeknight meal or a special occasion dinner. The carrots are tender and flavorful, with a slightly sweet and tangy glaze. The thyme adds a delicate, earthy flavor that complements the carrots perfectly. This dish is sure to be a hit with everyone at your table.
