I was craving scones one day and had to use up my fresh cherries, and came up with this wonderful recipe! The shortening gives it the incredibly moist texture.

Categories     Bread     Quick Bread Recipes     Scone Recipes

Time 2h40m

Yield 16

Number Of Ingredients 13

8 tablespoons butter-flavored shortening
4 tablespoons shortening
1 cup pitted fresh cherries, cut into thirds
4 cups all-purpose flour
⅔ cup white sugar
8 teaspoons baking powder
1 ½ teaspoons ground cinnamon
1 teaspoon salt
1 ½ cups heavy cream
2 eggs
1 cup confectioners' sugar
2 tablespoons milk, or more as needed
½ teaspoon ground cinnamon

Steps:

  • Place butter-flavored shortening and regular shortening into a freezer until very cold, at least 2 hours before use. Place cherries into the freezer until very cold, at least 15 minutes before use.
  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  • Combine flour, sugar, baking powder, cinnamon, and salt in a large bowl. Cut in cold butter-flavored shortening and regular shortening until flour mixture is combined.
  • Whisk heavy cream and eggs together in a small bowl. Stir into flour mixture until combined. Fold cold cherries into dough.
  • Roll dough out onto a lightly floured surface into a rectangle, about 1 1/2-inches thick. Cut in 1/2 lengthwise; cut out triangles from each 1/2. Place on the prepared baking sheet and place into the freezer to get cold, about 10 minutes.
  • Bake in the preheated oven until lightly golden on edges, about 15 minutes.
  • Remove scones from the oven and let cool about 5 minutes.
  • Meanwhile, combine confectioners' sugar, milk, and cinnamon in a bowl. Lightly drizzle glaze over cooled scones.

Tips:

  • Use fresh or frozen cherries. If using frozen cherries, thaw them completely before using.
  • Chop the cherries into small pieces. This will help them distribute evenly throughout the scones.
  • Use a combination of all-purpose and cake flour. This will give the scones a light and fluffy texture.
  • Be sure to work the butter into the flour mixture until it resembles coarse crumbs. This will help to create a flaky texture.
  • Do not overmix the dough. Overmixing will make the scones tough.
  • Chill the dough for at least 30 minutes before baking. This will help the scones to rise properly.
  • Bake the scones in a preheated oven. This will help them to rise evenly.
  • Do not overbake the scones. Overbaking will make them dry and crumbly.
  • Serve the scones warm with butter, jam, or clotted cream.

Conclusion:

Glace cherry scones are a delicious and easy-to-make treat. They are perfect for breakfast, brunch, or afternoon tea. With a few simple tips, you can make sure your scones turn out perfect every time. So next time you are looking for a special treat, give these scones a try!
