PEAR-GINGERSNAP CHEESECAKE

Pear-Gingersnap Cheesecake image

Categories     dessert

Time 8h20m

Number Of Ingredients 15

8 ounces gingersnaps (about 30 cookies)
4 tablespoons unsalted butter, melted
1 tablespoon packed light brown sugar
For the pear:
2 tablespoons unsalted butter
2 firm Bosc pears, peeled and cut into 1/2-inch wedges
1 tablespoon granulated sugar
3 tablespoons molasses
For the filling:
2 8-ounce packages Neufchatel cheese, at room temperature
1 1/4 cups granulated sugar
3 large eggs
2 teaspoons pure vanilla extract
2 tablespoons all-purpose flour
1 1/2 cups sour cream

Steps:

  • Fill a roasting pan halfway with water and set on a rack in the lower third of the oven; position another rack in the middle and preheat to 325 degrees F. Wrap the outside (bottom and side) of a 9-inch springform pan with foil. Make the crust: Pulse the gingersnaps in a food processor until finely ground. Add the melted butter and brown sugar and pulse to combine. Press into the bottom and about 1 inch up the side of the prepared pan; set aside.
  • Prepare the pears: Melt the butter in a large skillet over medium-high heat. Add the pears, sprinkle with the granulated sugar and cook, stirring occasionally, until the pears are tender and lightly browned around the edges, 5 to 7 minutes. Add the molasses and continue cooking until syrupy, about 2 more minutes; set aside.
  • Make the filling: Beat the Neufchatel cheese and granulated sugar in a large bowl with a mixer on medium speed until smooth and creamy, about 2 minutes. Add the eggs, one at a time, beating well after each addition. Add the vanilla and flour and beat until just combined, then add the sour cream and beat until smooth, about 1 more minute.
  • Pour the filling into the prepared crust. Gently arrange the pear slices on top; set aside any extra molasses syrup at room temperature for serving. Transfer the cheesecake to the oven, placing it on the middle rack directly over the water bath. Bake until lightly browned and set around the edge but the center still jiggles slightly, about 1 hour 15 minutes. Transfer to a rack and let cool to room temperature, then cover and refrigerate until cold and set, at least 6 hours or overnight. Let the cheesecake sit at room temperature 20 minutes, then run a thin knife around the edge and remove the springform ring. Drizzle with the remaining molasses syrup.

GINGERSNAP CRUMB PEAR PIE

Gingersnap Crumb Pear Pie image

This basic recipe was one my grandmother used for making crumble pies from fresh fruit. She simply substituted oats, gingersnaps or vanilla wafers depending on the fruit. Pear was always my favorite, and I added the ginger and caramel to give it a new twist. -Fay Moreland, Wichita Falls, Texas

GINGERSNAP-CARAMEL PEAR PARFAITS

GINGERSNAP-CARAMEL PEAR PARFAITS image

Categories     Fruit     Dessert

Yield Serves 8

Number Of Ingredients 8

4 Tbs. butter
1 cup brown sugar
4 large, firm (but ripe) Bartlett pears (about 2 pounds), halved and cored
2 cups heavy cream
2 Tbs. sugar
6 Tbs. brandy or cognac, divided
40 small gingersnap cookies
Candied or crystallized ginger

Steps:

  • Adjust oven rack to middle position and heat to 400 degrees. Melt butter in a 9-by-13-inch pan in the preheating oven until nutty golden. Sprinkle brown sugar evenly over butter in the pan, then place pears, cut sides down, over sugar. Bake until pears are tender when poked with a sharp knife and sauce is thick and caramel colored, about 40 minutes. Remove pears from sauce to a plate with a slotted spoon. Pour sauce in a measuring cup. (You should have about 1 cup of sauce. If not, simmer to reduce, or add water to equal 1 cup.) Cool pears and sauce to room temperature. (At this point, you can remove skin from the pears with a knife, if you want.) Cut each pear half into 8 chunks. When ready to assemble, whip cream into soft peaks, gradually adding sugar. Beat in 2 Tbs. of brandy. Set aside. Place 24 gingersnaps on a cookie sheet and lightly brush with some of the brandy. Work quickly; the cookies will soften in places, making them difficult to transfer. Arrange 3 cookies in each of 8 goblets. Drizzle each with some of the caramel sauce (about 1/3 cup total), a dollop of whipped cream and 4 pieces of pear. Lightly brush remaining 16 cookies with brandy and repeat layering with 2 cookies, 1/3 cup caramel sauce, whipped cream and 4 pieces of pear. Drizzle with remaining 1/3 cup caramel sauce, and cover each goblet with plastic wrap. Refrigerate parfaits and remaining whipped cream until serving time. To serve, garnish each goblet with a dollop of whipped cream and top with a couple slivers of candied ginger.

GINGERSNAP PEAR TART

Gingersnap Pear Tart image

An elegant and tasty desert for a dinner party.

Provided by Cindy Crane

Categories     Fruit Desserts

Number Of Ingredients 10

1 1/2 c gingersnap crumbs
1/2 c finely chopped walnuts
1/3 c butter or margarine melted
2-8 oz pkg cream cheese, softened
1/4 c sugar
2 Tbsp pear nectar
1/2 tsp vanilla extract
1-16 oz can(s) pear halves in heavy syrup, drained
1/4 c firmly packed brown sugar
1/4 tsp ground ginger

Steps:

  • 1. Combine crumbs, walnuts, and butter, stirring well. Firmly press crumb mixture evenly in bottom and up the sides of a 9-inch pie plate or tart pan. Bake at 350 degrees for 5 minutes. Let cool.
  • 2. Beat cream cheese at medium speed of an electric Stir in nectar and vanilla. Spread mixture evenly over prepared crust. Cut pears lengthwise into thin slices. Arrange pear slices on cream cheese mixture. Cover and chill at least 8 hours.
  • 3. Combine 1/4 cup brown sugar and ginger in a small saucepan; cook over medium heat, stirring constantly until sugar melts. Drizzle mixture over tart. Serve immediately.

Tips:

  • Choose ripe, firm pears: Pears that are too soft will break down during cooking and lose their shape. Look for pears that have a slight give when you press them gently.
  • Peel and core the pears before cooking: This will make them easier to eat and will help the poaching liquid to penetrate the pears more evenly.
  • Use a variety of spices in the poaching liquid: Common spices used for poaching pears include cinnamon, cloves, nutmeg, and ginger. You can also add other spices, such as cardamom, star anise, or vanilla bean, to create a unique flavor profile.
  • Poach the pears until they are tender but still hold their shape: The cooking time will vary depending on the type of pear and the desired level of tenderness. Check the pears frequently with a fork or skewer to see if they are done.
  • Serve the pears warm or at room temperature: Poached pears can be served as a dessert on their own or with a dollop of whipped cream, ice cream, or yogurt. They can also be used in other desserts, such as tarts, pies, and cakes.

Conclusion:

Poached pears are a delicious and elegant dessert that can be enjoyed by people of all ages. They are also a healthy dessert option, as they are low in fat and calories and high in fiber. With a little planning and effort, you can easily make poached pears at home. So next time you're looking for a special dessert to impress your friends and family, give poached pears a try.
