Steps:
- Preheat oven to 350 degrees. Slice ginger into 1/8-inch rounds. Place ginger slices, granulated sugar, and 2 cups water in a medium saucepan. Bring to a simmer; stir to dissolve sugar. Continue to simmer until mixture tastes strongly of ginger, about 20 minutes. Strain, and transfer ginger syrup to refrigerator to chill.
- Pierce one of the soft coconut eyes with a screwdriver or ice pick. Drain the liquid, and discard. Repeat with remaining coconuts. Wrap a coconut in a kitchen towel; twist the ends of the towel, and gather them to form a handle. Bang the coconut against the floor until it cracks in half. Repeat with remaining coconuts.
- Use the two most imperfect halves to make the shavings for garnish. Place these halves, flesh side down, on a baking sheet; place in oven. Bake about 20 minutes, until coconut flesh begins to pull away from shell. Remove from the oven, and let cool 5 minutes. Pry the coconut flesh away from shell in pieces that are as large as possible. Using a Japanese mandoline or a vegetable peeler, shave coconut into long strips. Place shavings in an even layer on a baking sheet. Return to oven; toast until golden around the edges, about 10 minutes. Set aside.
- In a large bowl, toss plums, nectarines, kiwis, blackberries, pineapple, and oranges with 1 cup shredded, sweetened coconut and the reserved ginger syrup.
- Place cream, confectioners' sugar, and amaretto, if using, in a chilled mixing bowl. Whisk until stiff peaks form. Place remaining coconut halves in bowls. Place 2 tablespoons of remaining shredded coconut and a dollop of whipped amaretto cream into the bottom of each coconut half. Spoon fruit mixture and syrup into coconut halves; top each with another dollop of cream. Garnish with a handful of toasted coconut. Serve.

Steps:
- Whisk together the lime juice, honey or agave nectar and ginger in a small bowl.
- Cut away the peel and white pith from the grapefruit. The easiest way to do this is to cut the ends off, then stand on one end and cut away strips of skin and pith at the same time. Hold the grapefruit over your serving bowl and cut the sections away from the membranes that separate them. Place in the bowl.
- Peel, core and dice the pears. Add to the grapefruit. Add the grapes, dates, pomegranate seeds and chia seeds. Stir the lime-ginger marinade and toss with the fruit. Chill for 30 minutes or longer and toss again.
- Sprinkle the coconut over the top and serve.

Steps:
- Peel the oranges, taking care to remove all the white pith. Slice the oranges over a bowl or storage container so that you catch any juice, and add the slices to the bowl. Circular slices look prettiest, hold together best, and are easiest.
- Add the pineapple and coconut to the orange slices and gently toss. The ambrosia can be refrigerated up to two days, covered.
- When ready to serve, slice the banana and toss it with other fruits. Add the cherries last.
- Serve the ambrosia in your prettiest glass bowl. It will become a tradition.
Tips:
- Use high-quality fruit: Fresh, ripe fruits will give your ambrosia the best flavor. If you can, buy fruits that are in season.
- Choose a variety of fruits: The more variety of fruits you use, the more interesting your ambrosia will be. Consider using a mix of citrus fruits, berries, and tropical fruits.
- Don't overcook the fruit: Cook the fruit just until it is softened but still holds its shape.
- Use a light hand with the sugar: Ambrosia is a naturally sweet dish, so you don't need to add a lot of sugar. Taste the fruit before you add any sugar, and then add it gradually until the desired sweetness is achieved.
- Chill the ambrosia before serving: This will allow the flavors to meld and will make the ambrosia more refreshing.
Conclusion:
Gingery Winter Fruit Ambrosia is a delicious and festive dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. Whether you serve it as a side dish, a dessert, or a snack, this ambrosia is sure to be a hit.
