1 teaspoon lemon juice
1-1/2 cups all-purpose flour
1 cup whole wheat flour

1/4 cup plus 2 teaspoons packed brown sugar, divided
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground ginger
1 teaspoon ground cinnamon
3 eggs
3/4 cup canola oil
1 teaspoon vanilla extract

Steps:

3 pears, peeled, chopped (about 2 cups)

1/4 cup butter, melted
1 egg, beaten
1 cup fresh cranberries

Steps:

  • Heat oven to 350°F.

1/2 cup vegetable oil
1 tablespoon finely chopped gingerroot
3 eggs
3 cups Gold Medal™ all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt

Steps:

  • Heat oven to 350° F. Grease bottoms only of 2 loaf pans, 8x4 inches, with shortening. In large bowl, mix pears, sugar, oil, gingerroot and eggs. Stir in remaining ingredients until well blended. Pour into pans.

1 medium pear, peeled, cored and grated (i used d'anjou)
1 c sugar
1/3 c canola oil
2 large eggs
3 Tbsp milk
2 c all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 tsp cinnamon (heaping)
1/8 tsp ground ginger
1/4 tsp nutmeg
1/3 c dried cranberries
1/2 c pecans, in pieces

Steps:

  • 1. Preheat oven to 350 degrees. Grease and flour a 9 inch loaf pan.
  • 2. In a large bowl, combine pear, sugar, oil, eggs and milk. Mix well.
  • 3. In a small bowl, sift together flour, baking soda, baking powder, salt, and spices.
  • 4. Add flour mixture to sugar mixture. Stir to combine. Add in cranberries and nuts. Mix well.

1 cup bosc pear, pureed (about 1 1/2 pears)
1 cup unbleached all-purpose flour

1 teaspoon vanilla
3 ounces crystallized ginger, cubed
1 cup finely chopped walnuts

Steps:

  • Core the pears (there's no need to peel the fruit) and purée it well in a blender or food processor.

4 tbsp demerara sugar
150ml milk
