1 large sweet onion, chopped
7 ripe mangoes, cored and chopped
1 fresh peach, chopped
⅓ cup honey
15 habanero peppers, stemmed, or more to taste
¼ cup yellow mustard
2 ½ tablespoons salt
2 ½ tablespoons paprika
1 ½ tablespoons ground white pepper
1 tablespoon ground cumin
⅓ teaspoon ground allspice
¼ cup light brown sugar
1 ½ cups white vinegar
½ cup apple cider vinegar

Steps:

1 1/2 cups roughly chopped peeled fresh mango (8.7 oz, from about 12 oz whole mango)
2 minced habanero peppers
2 medium garlic cloves, minced (about 2 teaspoons)
1 cup apple juice or 1 cup pure mango juice
1 cup tomato sauce
1/3 cup molasses
2 tablespoons honey
1/3 cup apple cider vinegar
2 tablespoons bottled lime juice
1 tablespoon tamari
1 teaspoon grated ginger
1/3 cup sugar
1 tablespoon onion powder
1/2 tablespoon mustard powder (I used hot, but use what you have)
2 teaspoons kosher salt
1 teaspoon fresh ground black pepper

Steps:

  • Combine all the ingredients in a pot and bring to a boil.
  • Reduce heat to low and simmer until mangoes have completely softened and sauce has slightly thickened, about 30 minutes, stirring occasionally.

4 large mangoes
1 ripe habanero pepper
1/2 cup lime juice
3 inches piece ginger, grated
1/4 cup sugar
1 -2 cup water (or apple juice)

Steps:

  • 1. remove the stem from the habanero and toss into the food processor. Pulse until you have tiny pieces.
  • 2. Peel the mango and remove the flesh. Add to the food processor and process until the mango is completely smooth
  • 3. Pout the mixture in a medium saucepan and cook on low heat.
  • 4. Add the lime juice, ginger and sugar. Add 1 cup of water/juice.
  • 5. Bring to a boil and continue to cook on low until sauce is reduced and thickened -- about 30-45 minutes. Taste and adjust the sugar and water to cater to your needs.
  • 6. Allow to cool and refrigerate overnight

Juice of one Lime

Steps:

  • Peel and cut your mango into smaller chunks.
  • Add to a blender jar, mango pieces, whole habanero peppers, ginger, garlic, and water.
  • Blend to a smooth paste.
  • Keep a saucepan ready and transfer the blended sauce to the pan. Heat up the pan with its contents. Keep over low heat setting.
