Categories     appetizer

Time 10m

Yield about 8 cups

Number Of Ingredients 11

1/4 cup unsalted butter
1/2 cup tahini
1 1/2 teaspoons gingerbread spice
A big pinch of kosher salt
1 1/2 teaspoons vanilla extract
1 cup chocolate chips
6 cups checkered rice cereal, such as Chex cereal
1 1/2 cups powdered sugar, plus more if needed
1 cup chocolate candies (I like to use M and M's)
1 cup crispy gingersnap cookies, broken up into bite-size pieces
Sprinkles, if desired

Steps:

  • In a small saucepan over medium-low heat, melt the butter. Stir in the tahini, gingerbread spice, salt and vanilla. Add the chocolate chips and stir until the chocolate is fully melted. Remove from the heat.
  • In a large plastic bin or bowl with a lid, combine the cereal and tahini mixture, stirring gently to keep the cereal from breaking. Stir in half of the powdered sugar and gently mix to combine. Then, add the rest of the confectioners' sugar, snap on the lid and shake, shake, shake! Taste and add more powdered sugar as desired. Finally, add the candies, gingersnaps and sprinkles if using. Toss gently to combine. Enjoy!

SALTY-SAVORY-SPICY SNACK MIX

Salty-Savory-Spicy Snack Mix image

Fair warning: This snack mix is so good it'll definitely ruin your appetite for dinner. In fact, we predict that you will find yourself making it often because you won't want to run out.

Categories     Nut     Cocktail Party     Super Bowl     Kid-Friendly     Oscars     Cashew     Shower     Party     Noodle     Soy Sauce     Gourmet     snack     snack week     Back to School     Small Plates

Yield Makes 14 cups

Number Of Ingredients 14

1 stick (1/2 cup) unsalted butter, cut into 8 pieces
2 tablespoons sugar
2 tablespoons soy sauce
2 tablespoons hoisin sauce
1 tablespoon sesame oil
3/4 teaspoon garlic powder
3/4 teaspoon ground ginger
3/4 teaspoon cayenne pepper
8 cups (3 ounces) popped popcorn
6 cups (6 ounces) rice cereal squares
1 (5 ounces) can chow mein noodles
1 (3 oz) package rice cracker snack mix
2 cups salted roasted cashews or dry-roasted peanuts
1 cup wasabi peas or dried peas

Steps:

  • Preheat oven to 250°F with racks in upper and lower thirds.
  • Melt butter in a small saucepan over medium-low heat and whisk in sugar, soy, hoisin, sesame oil, garlic powder, ginger and cayenne. Remove from heat.
  • Combine popcorn, rice cereal, chow mein noodles, Asian snack mix, cashews and wasabi peas in a very large bowl. Drizzle with butter mixture and toss well to coat. Spread evenly in 2 large (18- by 13-inch) rimmed sheet pans.
  • Bake, stirring every 15 minutes, a total of 1 hour.
  • Cool completely in pans on racks.

Tips:

  • Choose the right cereal. Cereals with a neutral flavor, such as Rice Krispies, Corn Flakes, or Chex, are best for this recipe. Avoid cereals with strong flavors, such as chocolate or fruit, as they can overpower the other ingredients.
  • Use fresh ginger. Fresh ginger has a brighter, more pungent flavor than ground ginger. If you only have ground ginger on hand, you can use it, but you may need to use a little more to get the same flavor.
  • Don't overcook the ginger. The ginger should be cooked until it is fragrant and slightly caramelized, but not burned. If you overcook the ginger, it will become bitter.
  • Add the cereal and nuts last. This will help to prevent them from becoming soggy.
  • Store the snack mix in an airtight container. This will help to keep it fresh and crispy.

Conclusion:

This gingery cereal snack mix is a delicious and easy-to-make treat that is perfect for parties, potlucks, or just snacking on at home. It is also a great way to use up leftover cereal. With its sweet, spicy, and salty flavors, this snack mix is sure to please everyone.
