1 c dark brown sugar
2 1/2 c flour
1 1/2 tsp baking soda
1 tsp cinnamon
1 tsp ground ginger
1/2 tsp salt
1/4 tsp nutmeg
1 egg
1/2 c molasses
1 c buttermilk**
1/2 c unsalted butter, melted

Steps:

  • 1. Preheat oven to 350 degrees (F). Spray/butter muffin tins.
  • 2. Combine sugar, flour, soda, salt and spices in a bowl.
  • 3. In a separate bowl mix the egg, molasses, milk, and butter.
  • 4. Add the wet ingredients to the dry and stir until just blended.
  • 5. Add to muffin tins** (about 3/4 full, these muffins don't rise too much, so you don't have to worry about them overflowing) and bake for 15 minutes. If making normal sized muffins, it'll be more like 20 minutes. Muffins are done when a toothpick comes out clean.
  • 6. **If you don't have buttermilk (I almost never do), just add 1 tbsp. of white vinegar or lemon juice to a cup of regular milk and let sit out for about 10 minutes.**

Steps:

  • For gingerbread muffins:
  • Preheat oven to 350°F. Lightly butter 16 standard (1/3-cup) muffin cups. Whisk flour, baking soda, ginger, cinnamon, cloves and salt in medium bowl to blend.
  • Using electric mixer, beat unsalted butter and sugar in large bowl to blend. Add large eggs and beat to blend. Beat in light molasses. Add half of dry ingredients, beating until blended. 1 c dark brown sugar
2 1/2 c flour
1 1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
1 tsp ground ginger
1/2 tsp salt
1/2 c molasses
1 c buttermilk
1 egg
1/2 c butter (unsalted), melted

Steps:

  • 1. Preheat oven to 350 degrees (F) and spray muffin pan with non-stick cooking spray.
  • 2. Combine the dry ingredients (brown sugar, flour, baking soda, cinnamon, nutmeg, ground ginger and salt).
  • 3. In separate bowl combine the remaining ingredients (molasses, buttermilk, egg and melted butter).
  • 4. Fill your muffin pan about 3/4 full with the muffin batter.
  • 5. Bake for approximately 15 minutes or until a toothpick comes out clean.

3 tablespoons margarine, melted
1/3 cup molasses
1/2 cup hot water
2 large apples
1 tablespoon margarine, melted

Steps:

  • Preheat oven to 350°F.
  • TO MAKE APPLE BOTTOMS: Peel, core, and slice apples into 1-inch chunks.
  • Mix apple chunks, tablespoon melted margarine, and 2 tablespoons brown sugar in a bowl until apples are lightly coated.
  • Place a spoonful of apple mixture in the bottoms of a lightly greased muffin pan and set aside.
  • TO MAKE GINGERBREAD BATTER: Combine flour, brown sugar, baking soda, and spices.
  • Mix egg replacer, melted margarine, molasses, and hot water in a separate bowl, then add this mixture to the dry mixture.
  • Stir just until thoroughly combined and spoon batter over apples.
