I love to grill, so these are a natural for me. The prep time doesn't include 8 hours of marinating time or the time to get your grill ready, so plan ahead.

1 lb sirloin steak, cut into 1 inch cubes
1/2 cup vegetable oil
1/2 cup Burgundy wine
2 large garlic cloves, minced
2 tablespoons crystallized ginger, finely chopped
2 tablespoons ketchup
2 tablespoons molasses
1/2 teaspoon salt
1/2 teaspoon curry powder
1/2 teaspoon pepper
3/4 medium green pepper, cut into 1 inch pieces
8 mushrooms, left whole unless large, halved otherwise
1/2 onion, cut in wedges

Steps:

  • Place the cut up meat in a shallow dish. Combine oil and next 8 ingredients; stirring well. Pour marinade over meat. Cover and marinate in the refrigerator for 8 hours.
  • Remove the meat from the marinade, reserving marinade. Place marinade in a small saucepan. Bring to a boil; reduce heat, and simmer for 5 minutes. Set aside.
  • Alternate meat and veggies on skewers. Grill over medium-hot coals for 10 to 12 minutes or to desired degree of doneness, turning and basting frequently with the reserved and heated marinade.

1 1/2 to 2 pounds boneless beef sirloin
3 cloves garlic, minced
2 teaspoons smoked paprika
1/2 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/3 cup red wine vinegar
1/2 cup olive oil
Special equipment: 4 (12-inch) metal skewers

Steps:

  • Cut the beef into 1 1/2 to 1 3/4-inch cubes and place into a large mixing bowl. Set aside.
  • In the bowl of a food processor combine the garlic, paprika, turmeric, cumin, salt, pepper and red wine vinegar. With the processor running drizzle in the olive oil.
  • Pour the marinade over the meat and toss to coat. Place in the refrigerator in an airtight container or a sealable plastic bag and allow to marinate for 2 to 4 hours.
  • Preheat the grill to medium-high heat. Thread the meat onto the skewers leaving about 1/2-inch in between the pieces of meat. Place on the grill and cook, with lid lowered, 2 to 3 minutes per side, 8 to 12 minutes in all (8 minutes for rare and 12 for medium). Remove from the heat to aluminum foil, wrap and allow to rest for 2 to 3 minutes prior to serving.

½ cup honey
½ teaspoon garlic powder
½ pinch ground ginger
2 red bell peppers, cut into 2 inch pieces
1 large sweet onion, peeled and cut into wedges
1 ½ cups whole fresh mushrooms
1 pound beef sirloin, cut into 1 inch cubes
1 ½ pounds skinless, boneless chicken breast halves - cut into cubes

Steps:

  • In a large resealable plastic bag, mix the teriyaki sauce, honey, garlic powder, and ginger. Place red bell peppers, onion wedges, mushrooms, beef, and chicken in the bag with the marinade. Seal, and refrigerate 4 to 24 hours.
  • Preheat grill for medium-high heat.
  • Discard marinade, and thread the meat and vegetables onto skewers, leaving a small space between each item.

1 pound beef sirloin steak or round steak 1 1/4 inches thick
2 bunches green onions
Ginger-Spice Marinade:
1/4 cup soy sauce
1/4 cup water
2 tablespoons honey
1/2 teaspoon grated ginger root or 1/4 teaspoon ground ginger
1/4 teaspoon ground allspice
1 clove garlic, finely chopped

Steps:

  • Prepare Ginger-Spice Marinade in shallow nonmetal dish or heavy-duty resealable plastic bag. Trim fat and bone from beef. Cut beef into 1 1/2-inch strips cut each strip into 1/4-inch pieces. Add beef to marinade, stirring to coat with marinade. Cover dish or seal bag and refrigerate at least 1 hour but no longer than 24 hours. Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat. Trim green tops from onions and reserve for another use. Cut onions into 1-inch pieces. Remove beef from marinade reserve marinade. Thread beef and onion pieces alternately on each of four 15-inch metal skewers, leaving space between each. Grill kabobs uncovered 4 to 5 inches from medium heat 10 to 15 minutes for medium doneness (160°F), turning frequently and brushing occasionally with marinade. To serve, heat remaining marinade to boiling boil and stir 1 minute.
