  • Heat gas or charcoal grill. In small bowl, mix teriyaki sauce, sesame seed and ginger.
  • Carefully brush grill rack with vegetable oil. Place chicken on grill rack over medium heat. 1/2 cup soy sauce
3 garlic cloves (peeled and crushed)

2 tablespoons honey

4 medium green onions (chopped)

Steps:

2 tablespoons plus 2 teaspoons minced green onion
1 cup panko breadcrumbs
Sesame-Ginger Sauce, for serving, recipe follows
1 1/3 cups sweet chili sauce
1 cup bottled teriyaki glaze
2 tablespoons lime juice
1 tablespoon sesame oil
1/4 teaspoon toasted sesame seeds (see Cook's Note)
1/8 teaspoon granulated garlic
1/8 teaspoon ground ginger

Steps:

  • Preheat the oven to 350 degrees F.
  • Lightly whisk the egg in a medium bowl. Add the teriyaki glaze and sweet chili sauce, and whisk until incorporated.
  • Place the ground chicken in a large bowl. Add the egg mixture, then sprinkle in the ground ginger, 1/4 teaspoon salt and a pinch of black pepper. Add the cilantro and green onions. Gently mix together by hand to avoid slopping over the side of the bowl. (Using kitchen gloves is more sanitary and less freaky.)   • Add the sweet chili sauce, teriyaki glaze, lime juice, sesame oil, sesame seeds, granulated garlic and ground ginger to a bowl; blend with a stick blender until thoroughly combined. Add a pinch of salt. (If you don't have a stick blender, whisk aggressively until the ingredients are well blended.)

3 1/2 tsp. kosher salt, divided, plus more
1 (12-oz.) can ginger beer
6 garlic cloves, finely grated
3/4 cup plus 6 Tbsp. unseasoned rice vinegar, divided
3 Tbsp. plus 1 tsp. finely grated ginger (from about one 4" piece)
1 Tbsp. white miso
3/4 cup plus 1 Tbsp. vegetable or sunflower oil, plus more for grill
6 scallions, finely chopped
2 bunches radishes, preferably with greens, halved lengthwise
Freshly ground black pepper
3 heads Little Gem lettuce or romaine hearts, leaves separated

Steps:

  • Season chicken on all sides with 2 1/2 tsp. salt and place in a large bowl. Add ginger beer, garlic, 3/4 cup vinegar, and 3 Tbsp. ginger to bowl and toss to combine. Cover and chill at least 2 hours and up to 24 hours.

  • Toss radishes with remaining 1 Tbsp. oil in a medium bowl; season lightly with salt and pepper. Grill, turning occasionally, until charred in spots, 8-10 minutes. Transfer to platter with chicken.
