GRILLED PRAWNS WITH CILANTRO AND GINGER SAUCE

Grilled Prawns With Cilantro and Ginger Sauce image

Based on a recipe from Ken Hom's Quick & Easy Chinese Cooking. Ken says, "Most of the work in this recipe may be done well in advance; the actual cooking takes but 5 minutes and the shellfish emerge from under the grill redolent of cilantro and tangy ginger, an ideal appetizer for guests." They can be cooked on the grill or in the broiler. They make an elegant cold buffet dish, or a quick and easy lunch. Quantities are easily scalable. I think these are great and very pretty!

Time 26m

Yield 6-8 serving(s)

Number Of Ingredients 10

2 lbs fresh prawns
1/2 cup canola oil
4 teaspoons fresh lime juice
1 teaspoon grated lime peel
1 medium onion, grated fine (I whirl to juice in the processor)
6 cloves garlic, minced
1 (1 inch) piece ginger, minced
2 green chilies, minced (hot)
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Shell and devein the prawns.
  • Evenly thread on 8 skewers.
  • Leave onion "juice" in the processor and add remaining ingredients.
  • Whirl to smooth.
  • Spread paste on prawns, both sides and marinate in the fridge for 2 hours.
  • At this point you can place under a preheated broiler for 3 minutes on each side or on the grill, same amount of time.
  • Cooking time is aproximate-depends on the size of your prawns.

Tips:

  • Use fresh ginger and garlic: Fresh ginger and garlic add more flavor to the prawns compared to the powdered versions.
  • Peel and devein the prawns: Peeling and deveining the prawns remove the shells and digestive tracts, making them easier to eat.
  • Marinate the prawns: Marinating the prawns in a mixture of ginger, garlic, soy sauce, and other seasonings tenderizes and adds flavor to them.
  • Use a well-seasoned wok: A well-seasoned wok distributes heat evenly and prevents the prawns from sticking.
  • Cook the prawns quickly: Prawns cook quickly, so don't overcook them, or they will become tough.

Conclusion:

This recipe for ginger prawns is a quick and easy way to make a delicious and flavorful seafood dish. The prawns are marinated in a mixture of ginger, garlic, soy sauce, and other seasonings, then cooked in a wok until they are cooked through. Serve the prawns over rice or noodles, or as an appetizer.
