APPLE PEAR GINGER CRISP

Apple Pear Ginger Crisp image

adapted from a recipe on tastykitchen.com. the amount of pears and apples is a guess, since they are different sizes, I used 4 of each but just mostly fill a 2.5 qt casserole- it should be almost to the very top with the crumble topping. candied or crystalized ginger can be used. ice cream is the best way to serve this- classic vanilla is how i had it but cinnamon or ginger (like haagen dazs) would be great too.

GINGER PEAR CRISP

GINGER PEAR CRISP image

Categories     Fruit     Dessert

Yield 6 servings

Number Of Ingredients 12

3/4 cup almonds (3 ounces)
1/2 cup unbleached all-purpose flour (2 1/2 ounces)
1/4 cup packed light brown sugar (1 3/4 ounces)
4 tablespoons granulated sugar
3/4 teaspoon ground ginger
2 tablespoons chopped crystalized ginger
Table salt
5 tablespoons unsalted butter , melted and cooled
1 teaspoon cornstarch
1 teaspoon grated fresh ginger
1 teaspoon fresh lemon juice from 1 lemon
3 pounds ripe but firm pears (6-7 medium), see note above

Steps:

  • 1. 1. Adjust oven rack to lower-middle position and heat oven to 425 degrees. Process almonds, flour, brown sugar, 2 tablespoons granulated sugar, ground ginger, crystallized ginger, and 1/8 teaspoon salt in food processor until nuts are finely chopped, about nine 1-second pulses. Drizzle butter over flour mixture and pulse until mixture resembles crumbly wet sand, about five 1-second pulses, pausing halfway through to scrape down sides and bottom of workbowl. Set aside while preparing fruit. 2. 2. Whisk remaining 2 tablespoons granulated sugar, cornstarch, fresh ginger, lemon juice, and pinch of salt together in large bowl. Peel pears, then halve and core each (see illustrations below). Cut each half into 4 wedges and then cut in half crosswise (pieces should be about 1 1/2 inches). Gently toss pears with sugar mixture and transfer to 8-inch-square baking dish. 3. 3. Sprinkle topping evenly over fruit, breaking up any large chunks. Bake until fruit is bubbling around edges and topping is deep golden brown, 27 to 32 minutes. Cool on wire rack until warm, at least 15 minutes, and serve.

Tips:

  • Choose ripe pears: Using ripe pears will ensure that your crisp has a sweet and juicy flavor.
  • Peel and core the pears: This will help the pears cook evenly and prevent the skin from becoming tough.
  • Slice the pears thinly: This will help them cook quickly and evenly.
  • Use a variety of spices: The combination of ginger, cinnamon, and nutmeg gives this crisp a warm and flavorful taste.
  • Don't overcook the crisp: The pears should be tender but still hold their shape.
  • Serve the crisp warm: This is when it is at its best, with a crispy topping and a warm, gooey filling.

Conclusion:

This ginger pear crisp is a delicious and easy-to-make dessert that is perfect for any occasion. With its sweet and juicy pears, warm and flavorful spices, and crispy topping, this crisp is sure to be a hit with everyone who tries it. So next time you're looking for a dessert that is both delicious and impressive, give this ginger pear crisp a try.
