Steps:
- For the salad: Remove the skin from the chicken and shred the meat with a fork. Toss in a large bowl along with the scallions, red pepper, cabbage, lettuce, bean sprouts, water chestnuts, cilantro, peanuts and chow mein noodles. With a sharp knife, cut the peel from one of the oranges, then cut the segments away from the membranes. Coarsely chop the segments, then add them to the bowl. Slice the other orange in half and squeeze over a small bowl, reserving 2 tablespoons juice.
- Make the dressing: Whisk together the reserved orange juice, hoisin sauce, vinegar, ginger and garlic in a small bowl. Slowly add the oil, whisking constantly, until emulsified and thick; season with salt and pepper. Pour the dressing over the salad, then season with salt and pepper. Toss and serve.

Steps:
- Preheat oven to 375°. Put flour and coconut milk in separate wide, shallow bowls. In another bowl, mix nuts and panko. Rinse chicken and pat dry. Sprinkle all over with salt and pepper.
- Put 2 tablespoons butter and 2 tablespoons olive oil in a large frying pan over medium heat. Dredge chicken in flour, shaking off excess; dip into coconut milk, letting excess drip off; then press into nut mixture to coat on all sides. Reserve coconut milk. Lay chicken in frying pan in a single layer and cook until golden brown on the bottom, 3 to 4 minutes. With a spatula, turn pieces (taking care not to break off nut coating) and brown on the other side, 2 to 3 minutes longer. Transfer chicken to a baking pan and bake until no longer pink in center of thickest part (cut to test), 15 to 20 minutes.
- Meanwhile, wipe any scorched nuts from pan with a paper towel. If pan is dry, add 1 tablespoons each butter and olive oil, then shallots, ginger, and garlic. Cook over medium heat, stirring often, until beginning to brown, about 5 minutes. Pour in broth, wine, and orange juice. Boil until liquid is reduced by about half, 8 to 10 minutes.
- Pour mixture into a blender and, holding lid down tightly with a towel, whirl until very smooth. Return sauce to frying pan and add 1/4 cup reserved coconut milk (discard remainder) and salt and pepper to taste; stir over low heat until hot, then pour into a small bowl.
- Spoon Coconut Pilaf onto plates, top with chicken, and serve with sauce.
- *Chop the nuts by pulsing briefly in a food processor. Finely shred the peel from the oranges and save it for the pilaf.

SAUTEED CHICKEN WITH GINGER ORANGE CHICKEN GLAZE
Yield 4 main dish
Number Of Ingredients 10
Steps:
- Directions: Salt and pepper each chicken breast and coat with flour. Saut over medium high heat in 1 tbs olive oil, until chicken is cooked through. Remove the chicken and grease. Add the green onion, orange juice, sugar, ginger, and mustard and cook until thickened over medium heat. Return the chicken to the pan and turn several times in the sauce.
Tips:
- Prep Your Ingredients: Before you start cooking, make sure all your ingredients are prepped, washed, and cut. This will help the cooking process go smoothly and quickly.
- Use Fresh Ginger and Orange: Fresh ginger and orange add a vibrant flavor to the dish. If you don't have fresh ginger on hand, you can use ground ginger, but it won't be as flavorful.
- Adjust the Spice Level: The amount of ginger and cayenne pepper you add to the dish can be adjusted to your preference. If you like a spicier dish, add more ginger and cayenne pepper. If you prefer a milder dish, use less.
- Don't Overcook the Chicken: Overcooked chicken will be tough and dry. Cook the chicken until it is cooked through but still tender.
- Serve Immediately: Ginger Orange Chicken is best served immediately after it is cooked. This will ensure that the chicken is hot and crispy and the sauce is flavorful.
Conclusion:
Ginger Orange Chicken is a delicious and easy-to-make dish that is perfect for a quick and flavorful meal. The combination of ginger, orange, and soy sauce creates a sweet and tangy sauce that pairs perfectly with the crispy chicken. This dish can be served with rice, noodles, or vegetables. Ginger Orange Chicken is a great way to enjoy the flavors of Asian cuisine at home.
