CEDAR PLANK SALMON WITH MAPLE-GINGER GLAZE

Cedar Plank Salmon With Maple-Ginger Glaze image

Provided by Food Network Kitchen

Categories     main-dish

Time 1h10m

Yield 6-8 servings

Number Of Ingredients 7

1 2-to-3-pound skin-on center-cut salmon fillet (about 1 1/2 inches thick)
2 teaspoons ground coriander
Kosher salt and freshly ground pepper
1/4 cup pure maple syrup
1 2-inch piece ginger, peeled and grated
Grated zest and juice of 1 lemon
2 tablespoons unsalted butter

Steps:

  • Soak 1 large cedar grilling plank (15 by 6 inches) in a baking dish of water, about 2 hours; put a plate or mug on top to keep the plank submerged.
  • Preheat the oven to 425 degrees F. Sprinkle the salmon with the coriander, 1 teaspoon salt and 1/2 teaspoon pepper. Let stand at room temperature about 15 minutes.
  • Meanwhile, heat the maple syrup, ginger, lemon zest and butter in a small saucepan over medium heat until slightly thickened, about 7 minutes. Stir in the lemon juice and set aside.
  • Remove the cedar plank from the water and pat dry. Place the plank directly on the oven rack and preheat about 15 minutes. Using tongs or oven mitts, remove the hot plank from the oven and place the fish, skin-side down, on the wood. Brush the fish with half of the ginger glaze. Transfer the fish on the plank to the oven; put a baking sheet on the rack below to catch any drips. Cook until the salmon is just firm and slightly golden on top, about 12 minutes.
  • Remove the fish from the oven and change the oven setting to broil. Brush the remaining ginger glaze over the salmon and broil until golden, 2 to 3 more minutes. Remove from the oven and let rest 5 minutes on the plank before serving. Serve warm or at room temperature.

Time 35m

Yield 4 to 6 servings

Number Of Ingredients 20

4 duck breasts, trimmed of excess fat
Salt and freshly ground black pepper
Asian Spice Rub, recipe follows
Ginger-Garlic-Chile Glaze, recipe follows
1 bunch green onions, grilled
Flour tortillas, grilled or warmed through
2 tablespoons Spanish paprika
1 tablespoon dry mustard
2 teaspoons kosher salt
2 teaspoons ground black pepper
2 teaspoons ground star anise
2 teaspoons ground ginger
1 teaspoon ground allspice
1/4 teaspoon ground red pepper
2 tablespoons peanut oil

2 tablespoons hot Asian chili paste, (recommended: Sambal Oelek)
1/2 cup honey
1/4 cup low-sodium soy sauce

Steps:

  • Rub the skin side of each breast with a few tablespoons of the rub and place on the grill, rub side down, and grill until slightly charred and the skin begins to get crispy, about 4 to 5 minutes. Turn the breasts over, brush with some of the glaze and continue grill to medium-rare doneness, another 3 to 4 minutes. Remove the duck from the grill and brush with more of the glaze. Let rest for 5 minutes then slice 1/4-inch thick on the diagonal. Place the grilled green onions on a platter and top with the sliced duck breast. Serve with warm tortillas.

SEARED DUCK BREAST WITH CHILI, HONEY & GINGER GLAZE

Seared Duck Breast with Chili, Honey & Ginger Glaze image

Categories     Duck     Ginger     Poultry     Sauté     Quick & Easy     Dinner     Hot Pepper     Honey     Paleo     Dairy Free     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     Kosher

Yield Serves 6-8

Number Of Ingredients 8

2 whole magret duck breasts, approximately 1 pound each, available from specialty meat markets
Salt and freshly ground pepper to taste
1 small dried ancho chili pepper soaked in 1 cup boiling water for 30 minutes
1 small white onion, finely chopped
1 tablespoon grated ginger
2 tablespoons warm honey dissolved in 1/2 cup port wine
2 scallions, chopped, about 1/2 cup
(optional serving suggestion: serve with mashed sweet potatoes or roasted carrot pureé)

Steps:

  • With the point of a knife, score the skin side of the breasts in crosshatch pattern, being careful not to pierce the flesh of the meat. Season the duck breasts with salt and pepper. Heat a sauté pan over medium heat for 1 minute before adding the breasts, skin side down. Cook skin side down over medium to low heat, for approximately 10 to 12 minutes to render the fat from the skin before turning the breasts over. When the duck has rendered its fat and the skin has taken on a crisp exterior quality turn the breasts over and sauté the flesh side for 3 to 4 minutes. Carefully remove the duck from the pan, place on a platter to keep warm and pour the excess fat safely into a heat proof container. (The reserved duck fat may be chilled and used for another cooking use.)
  • While the duck is cooking (or even before you cook the duck), remove the chili pepper from the water in which it had soaked and reserve the liquid. Place the chili into a blender and begin to pureé, adding as much of the reserved liquid as necessary to create a smooth and thin paste-like texture. This chili paste may be refrigerated for a day covered with plastic wrap or pour a tablespoon of olive oil on its surface and keep refrigerated for up to 1 week.
  • After removing the duck breasts from the pan add the onion to still hot pan and return to the heat. Add a tablespoon or two of reserved duck fat. Sauté the onion briefly before adding the ginger and 2 tablespoons of the chili paste. Add the honey and port to the ginger chili, stir to combine and cook for one minute.
  • The breasts have rested for several minutes and should now be medium rare. They can be sliced lengthwise or cross-wise and several slices placed on each plate. Drizzle the warm glaze over the duck or for more impact, brush some on the duck breasts before slicing, run the duck under a hot broiler for 1 minute, caramelize the glaze and then slice and drizzle. If you desire, drizzle some around the duck breasts on the serving dish.

OVEN FRIED TILAPIA WITH GINGER SOY GLAZE

OVEN FRIED TILAPIA WITH GINGER SOY GLAZE image

Categories     Fish     Bake     Low Fat     Quick & Easy

Yield 4 people

Number Of Ingredients 11

For the Fish
1 - 1 1/2 pound of Tilapia fillets (around 4 - 6 fillets).
1 cup all purpose unbleached flour
2 slices of whole wheat bread
1/2 cup of Egg substitute
1 teaspoon of salt.
1 Scallion sliced for garnish
For the Ginger Soy Glaze
1/2 cup light Soy Sauce
1 1/2 tablespoon brown sugar
1 teaspoon slice fresh ginger

Steps:

  • Preheat the oven and cookie sheet at 425. While the oven preheats, rinse the tilapia fillets under cold water and dry with paper towel. Set aside. Now take the whole wheat bread and tear into small pieces. Place bread into a food processor and pulse about 10 -15 times to make fresh bread crumbs. Empty bread crumbs onto a plate. In a 1 gallon zip lock bag combine the flour and salt. Put the egg substitute into a flat bowl. Now take the fillets and place them into the flour and shake to coat evenly. Once the fillets are coated, shake off excess flour and place into fillets into the egg wash (one by one). Once both sides of the fillet are covered with egg place into bread crumbs and coat evenly, set aside on a clean plate. Repeat with the other fillets. Once all the fillets are breaded take the cookie sheet out of the oven and add 3 tablespoons of Canola oil tilt the cookie sheet to coat well. Add the fish to the cookie sheet and place fish back into the oven. You will cook the fish for approximately 10 minutes (depending on the thickeness)flipping the fish 1/2 way during the cooking time. While the fish is cooking combine the soy sauce, ginger and brown sugar in a small sauce pan. Bring the mixture to a boil, then reduce to a simmer for about 5 minutes. The mixture should thicken slightly (resembling a loose syrup). Remove from heat. Take out the fish and place on a platter. Do not cover the fish as the crust will get soggie. Drizzle the Ginger Soy glaze on top of fish and garnish with the sliced scallions.

Tips:

  • Choose the right ginger: Use fresh ginger for the best flavor. Look for ginger that is firm and plump, with no signs of shriveling or bruising.
  • Peel the ginger properly: To easily peel ginger, use a spoon to scrape off the skin. This method is much faster and easier than using a knife.
  • Use a microplane grater: A microplane grater is the best tool for grating ginger. It will produce a fine, even grate that will distribute evenly throughout the glaze.
  • Don't overcook the glaze: The glaze should be cooked until it is thick and syrupy, but it is important not to overcook it. Overcooked glaze will be too thick and difficult to spread.
  • Use the glaze immediately: The glaze is best used immediately after it is made. If you need to store it, you can keep it in the refrigerator for up to 2 weeks.

Conclusion:

Ginger glaze is a versatile condiment that can be used to add flavor to a variety of dishes. It is perfect for glazing chicken, pork, and fish, and it can also be used as a dipping sauce for appetizers. With its sweet and slightly spicy flavor, ginger glaze is sure to be a hit with your family and friends.
