SPICY GARLIC GINGER EDAMAME

Spicy Garlic Ginger Edamame image

This spicy garlic edamame is ridiculously simple to make and tastes amazing. Cooking edamame at home is easy and takes minutes. In the recipe, we cook the edamame in their shells. You don't actually eat the shells, though. To eat the beans inside, use your front teeth to scrape the beans out of their shell. They pop out really easily.

Time 10m

Yield Makes about 4 servings

Number Of Ingredients 8

1 pound fresh or frozen edamame in their pods
1 tablespoon neutral oil like avocado, grape seed or safflower oil
1 tablespoon minced garlic
1 tablespoon minced fresh ginger
2 tablespoons light soy sauce or tamari
2 to 3 teaspoons pure maple syrup, sugar or honey
1 teaspoon toasted sesame oil
1/2 to 1 tablespoon Sambal Oelek or Sriracha

Steps:

  • Edamame can be made on the stovetop or in the microwave.
  • To boil edamame: Bring a large pot of water to a boil and add a teaspoon of salt. Add the edamame and return to a boil. Cook until bright green and heated through, 3 to 5 minutes. Drain.
  • To microwave edamame: Place the edamame in a microwave-safe dish with 1/4 cup of water and a pinch of salt. Partially cover the dish with a plate, and then microwave on high until bright green and heated through. Depending on your microwave, this can take 1 to 5 minutes.
  • Heat the oil in a medium skillet over medium heat. Add the garlic and ginger. Cook until fragrant, but before they brown, 30 to 60 seconds. Remove the skillet from the heat, and then stir in the soy sauce, maple syrup, sesame oil, and chili sauce.
  • Taste and adjust with additional maple syrup to balance out the soy sauce or more chili sauce to make it spicier.
  • Toss the edamame with the sauce and serve.

MISO COD WITH EDAMAME RICE

Miso Cod with Edamame Rice image

Cod is a very mild and affordable fish that lends itself well to a variety of seasonings including the umami-rich, sweet-salty miso glaze in this recipe. To complete the meal, we steam sliced carrots in the same pot as the rice while it cooks for a complete one-pot side dish.

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 12

4 6-ounce cod fillets
2 tablespoons white miso paste
1 tablespoon plus 1 teaspoon toasted sesame oil
4 teaspoons honey
2 teaspoons grated fresh ginger
1 cup long-grain white rice, rinsed well
Kosher salt
2 carrots, thinly sliced on an angle
1 cup frozen shelled edamame, thawed
2 scallions, sliced
1 tablespoon toasted sesame seeds
Freshly ground pepper

Steps:

  • Preheat the broiler. Place the cod fillets on a foil-lined baking sheet. Stir the miso, 1 tablespoon sesame oil, the honey and ginger in a small bowl until smooth. Rub the cod all over with about 2 tablespoons of the sauce. Arrange flat-side down and spread the remaining sauce over the top of the fillets.
  • Bring 1 1/2 cups water to a boil in a medium saucepan. Stir in the rice and 1/2 teaspoon salt. Return to a boil, then stir and reduce the heat to medium low. Add the carrots on top of the rice, cover and cook until the liquid is absorbed and the rice is tender, about 15 minutes. Sprinkle the edamame on top, cover and let stand, 5 minutes.
  • Meanwhile, broil the cod until the sauce is browned and the fish flakes easily with a fork, 6 to 8 minutes, depending on the thickness.
  • Fluff the rice to mix in the carrots and edamame. Add half the scallions and sesame seeds and the remaining 1 teaspoon sesame oil and stir to combine; season with salt and pepper. Divide the rice among plates. Top with the cod and sprinkle with the remaining scallions and sesame seeds.

1 (2-inch) piece fresh ginger, peeled and cut into large chunks
2 garlic cloves, minced
Kosher salt
1 1/2 cups basmati white rice
1 cup shelled frozen edamame

2 boneless, skinless chicken breast halves (6 to 8 ounces each), cut crosswise into thin strips
1 tablespoon cornstarch
2 tablespoons vegetable oil
1 small red onion, halved and thinly sliced
2 garlic cloves, thinly sliced

Tips:

  • Use fresh edamame: Fresh edamame has a sweeter, more vibrant flavor than frozen edamame. If you can't find fresh edamame, frozen edamame will work, but be sure to thaw it completely before using.
  • Don't overcook the edamame: Edamame should be cooked just until it is bright green and tender. Overcooked edamame will be mushy and lose its flavor.
  • Use a variety of vegetables: This recipe is a great way to use up leftover vegetables. Some good options include broccoli, carrots, snow peas, and bell peppers.
  • Make it a complete meal: This recipe can be served as a side dish or as a main course. To make it a complete meal, add some grilled chicken, fish, or tofu.

Conclusion:

Ginger edamame rice is a delicious and healthy dish that is perfect for a quick and easy meal. It's packed with flavor and nutrients, and it can be served as a side dish or as a main course. This recipe is a great way to use up leftover vegetables, and it's also a great way to get your daily dose of protein and fiber. So next time you're looking for a quick and easy meal, give this ginger edamame rice a try.
