  • Preheat oven to 300 degrees. Mix together oats, coconut, both nuts, maple syrup, oil, brown sugar, pepitas, and 1 teaspoon salt (or to taste). 1 ½ teaspoons ground ginger, or to taste

½ teaspoon ground cardamom

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Mix rolled and quick-cooking oats, pecans, walnuts, almonds, and pepitas together and spread out on a sheet pan.
