Time 1h10m

Number Of Ingredients 9

3 slice bacon, chopped
1 red onion, sliced
2 granny smith apples, peeled, cored and sliced
salt and freshly ground pepper, to taste
1 small head red cabbage, cored and shredded (about 2 1/2 pounds)
1 1/2 c chicken broth
1/3 c apple cider vinegar
1/4 c bbq sauce
1 Tbsp butter

Steps:

  • 1. Cook the bacon in a large saucepan, or frying pan, over medium-low heat until the fat has started to render but the bacon is not yet crisp. Add the red onions, apples, salt and pepper, to taste. Saute until the mixture softens, about 5 minutes. Add the cabbage and stir until it begins to soften and wilt down; season again with salt and pepper, to taste. Add the chicken broth and the apple cider vinegar and reduce over medium-low heat. Cover and stir occasionally until the cabbage is tender.
  • 2. Once cabbage is cooked, remove the lid and add the BBQ sauce. Turn heat to medium and let the liquid reduce until it's nice and syrupy. Transfer to a serving bowl and top with a pat of butter. Serve hot.

GINA'S BUTTERMILK BBQ SAUCE

Categories     condiment

Time 40m

Yield 1 cup

Number Of Ingredients 5

1 cup apple cider
1 tablespoon brown sugar
1/2 cup Neely's BBQ sauce, or store-bought BBQ sauce
1 tablespoon buttermilk
4 cooked thick-cut pork chops

Steps:

  • In a small saucepan over medium heat, reduce the apple cider and brown sugar until thick and syrupy, about 25 minutes. Reduce heat and stir in BBQ sauce. Turn heat off. Add buttermilk and mix. Serve on top of pork chops.

Tips:

  • Choose the right cabbage: Select a firm, heavy head of cabbage with tightly packed leaves. Avoid any heads that are wilted or have brown spots.
  • Cut the cabbage properly: Cut the cabbage into thin strips or wedges. This will help it cook evenly and absorb the flavors of the sauce.
  • Don't overcook the cabbage: Cabbage should be cooked until it is tender but still has a bit of crunch. Overcooked cabbage will be mushy and bland.
  • Use a flavorful sauce: The sauce is what really makes this dish. Use a sauce that is tangy, smoky, and slightly sweet. You can use a store-bought sauce or make your own.
  • Cook the cabbage over low heat: This will help the flavors of the sauce to penetrate the cabbage and prevent it from burning.
  • Serve the cabbage hot: Cabbage is best served hot off the grill. You can also serve it at room temperature or cold.

Conclusion:

Gina's BBQ cabbage is a delicious and easy-to-make side dish that is perfect for any occasion. It is a great way to use up leftover cabbage and it is also a healthy and affordable dish. With a few simple tips, you can make sure that your BBQ cabbage turns out perfect every time.
