2 large heads of garlic, separated into cloves and peeled
2 tablespoons oil
tortilla chips, large bag
1/4 cup red onion, chopped
1 (4 ounce) can green chilies
1/3 cup sliced pimento stuffed olive (optional)
1 1/2 cups monterey jack cheese, shredded and jalapeno flavored
chopped cilantro (to taste)
chopped green onion top (to taste)
