Two 1-pound pork tenderloins
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons grapeseed oil
2 tablespoons grapeseed oil
2 large shallots, chopped
1/2 teaspoons kosher salt, plus extra for seasoning
1/4 teaspoon freshly ground black pepper, plus extra for seasoning
3 cloves garlic, minced
1/2 cup white wine, such as pinot grigio
1/2 cup honey
1/2 cup Dijon mustard
2 tablespoons red wine vinegar
1 tablespoon chopped fresh thyme
2 tablespoons unsalted butter, cut into 1/2-inch pieces, at room temperature
6 sourdough demi-baguettes or rolls, halved lengthwise

Steps:

2 tablespoons honey
2 garlic cloves, minced
2 tablespoons chopped fresh rosemary leaves
1 (3 1/2-pound) center-cut, boneless, pork loin roast
12 slices bacon (about 1 pound)
3 tablespoons fresh lemon juice
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
5 cups (5 ounces) baby arugula

  • For the pork: Put an oven rack in the lower 1/3 of the oven. Preheat the oven to 350 degrees F.

1 1/2 teaspoons salt
3/4 teaspoon fresh ground black pepper
2 tablespoons vegetable oil
2 cloves garlic, minced
2 tablespoons minced shallots
1 tablespoon tomato paste
2 tablespoons whole grain mustard
2 tablespoons honey
2 1/2 tablespoons red wine vinegar
