1 cup chopped almonds
1 large egg, room temperature, lightly beaten
2/3 cup butter, melted
1/2 cup honey
1 teaspoon vanilla extract
1/2 cup sunflower kernels
1/2 cup sweetened shredded coconut
1/2 cup chopped dried apples
1/2 cup dried cranberries
1/2 cup packed brown sugar
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350°. Combine oats and almonds in a 15x10x1-in. baking pan coated with cooking spray. I found these at the Mr. Food site. My friends says they really are called Get Up and Go Bars because with all the fiber, you really will have to get up and run! Especially if you have one of these bars with your first morning cup of coffee!

1/2 cup sugar
1 1/2 cups light corn syrup
1 cup peanut butter
4 cups Grape-nuts cereal (wheat and barley nugget cereal)
1 cup rolled oats
1 cup sliced almonds
1 cup dried cranberries

Steps:

  • Line a 9" x 13" baking dish with foil and coat the foil with nonstick cooking spray.
  • (I just use parchment paper, ungreased).
  • In a large saucepan, combine the sugar, corn syrup, and peanut butter over medium-high heat.
  • Bring to a boil and cook for 1 minute, stirring constantly.
  • Add the remaining ingredients; mix well then spread evenly into the prepared pan.
