3 pounds medium potatoes (about 10), peeled and quartered
1 cup all-purpose flour
3 large eggs, lightly beaten
2/3 cup dry bread crumbs
1 teaspoon salt

12 cups water
BROWNED BUTTER SAUCE:
1/2 cup butter, cubed
1 tablespoon chopped onion
1/4 cup dry bread crumbs

Steps:

  • Place potatoes in a Dutch oven; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, 15-20 minutes or until tender. Drain; transfer to a large bowl., Mash potatoes. Stir in flour, eggs, bread crumbs, salt and nutmeg. Shape into sixteen (2-in.) balls., In a Dutch oven, bring 12 cups water to a boil. Carefully add dumplings. Reduce heat; simmer, uncovered, 7-9 minutes or until a toothpick inserted in center of dumplings comes out clean., Meanwhile, in a small heavy saucepan, heat butter and onion over medium heat. Heat 5-7 minutes or until butter is golden brown, stirring constantly. Remove from heat; stir in bread crumbs. Serve with dumplings.

The latest German import to my potato side dish collection are these soft, comforting dumplings drizzled in browned butter and topped with, sorry, not bacon, but something even better! Just try it to find out what it is. For best results, roast, don't boil, the potatoes so they're nice and dry. Yes, you can top these dumplings with bacon anyway, and/or sautéed onions and mushroom sauce. I served mine with sausage and red cabbage.

2 large russet potatoes
1 stick unsalted butter
2 cups fresh bread cubes
salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
1 pinch freshly grated nutmeg, or to taste
2 large eggs
1 cup all-purpose flour
1 tablespoon snipped fresh chives, or to taste

Steps:

  • Place potatoes in a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until just tender, 15 to 20 minutes. Drain and let cool until easily handled.
  • Meanwhile, melt butter in a skillet over medium heat. Add bread cubes; cook and stir until golden brown and crunchy, 4 to 5 minutes. Remove from heat and transfer bread to a bowl using a slotted spoon. Reserve the browned butter in the pan.
  • Peel potatoes and place them in a large bowl. Mash and season with salt, pepper, cayenne, and nutmeg. Stir in eggs and mash until combined. Add flour; stir just until flour disappears. Do not overmix dough.
  • Bring a pot of salted water to a simmer. Dampen hands with water and scoop a spoonful of the dough onto your palm. Shape into a circle, make a light indentation in the center, and place 2 or 3 croutons inside. Roll into a smooth ball, sealing in the croutons. Repeat with remaining dough and croutons.
  • Use a large spoon to lower dumplings into the simmering water, one at a time. Cook until they float to the top, 1 to 2 minutes. Cover and simmer over medium-low heat until set, flipping dumplings over halfway, until 20 minutes.
  • Place dumplings on a serving plate. Drizzle with reserved browned butter. Crumble remaining croutons on top and garnish with chives. Let dumplings firm up slightly before serving, about 10 minutes.

Just what the name implies - these are German-style potato dumplings, as found everywhere in the South of Germany, Austria and Bohemia. These are traditionally served with any roast with gravy, but most well-known as an accompaniment for a hearty Sauerbraten and red cabbage. Like polenta, second-day leftovers are a treat when sliced into slabs and fried in butter.

1 1/2 lbs russet potatoes (about 2 large)
1 1/2 teaspoons salt
1/8 teaspoon ground nutmeg
1/2 cup all-purpose flour (or more)
1/8 cup cornstarch (or potato starch, much preferred, if you can get it)
1 large egg
2 slices sourdough bread or 2 slices white bread (good quality, not supermarket foam crap)
1 tablespoon unsalted butter
1 tablespoon corn oil or 1 tablespoon vegetable oil

Steps:

  • Trim crusts off bread and save them for another use.
  • Cut bread into 1/2-inch cubes and fry in butter and oil mixture until golden brown, transfer to paper towel to dry.
  • Cook scrubbed, unpeeled potatoes in large pot of boiling salted water until tender, about 45 minutes.
  • Drain.
  • Cool slightly.
  • Peel.
  • Cut potatoes into large pieces.
  • Refrigerate until cold, about 30 minutes.
  • Mash potatoes with fork or run through ricer into large bowl.
  • Mix in salt and nutmeg.
  • Add 1/2 cup flour and cornstarch.
  • Using hands, knead mixture in bowl until smooth dough forms, adding more flour by tablespoonfuls if dough is sticky.
  • Mix in egg.
  • Form dough into balls, using 1/4 cupful for each.
  • Insert bread cube into center of each dumpling; roll dumpling between palms to enclose bread cube completely and form smooth balls.
  • Working in batches, cook dumplings in large pot of nearly boiling salted water 10-15 minutes (or until dumplings rise to top).
  • Using slotted spoon, transfer dumplings to large bowl.
  • Keep covered with a damp kitchen towel as remaining dumplings are cooked.
  • You should place no more than 4-5 dumplings in your pot at any one time in order to prevent them from sticking together or touching during cooking, which will cause them to fall apart.

This recipe was passed down to me from my German born grandmother. She came to this country in the 1930s. She worked in a country club as a cook and was quite an accomplished one at that. This is one of her german recipes passed down to me. This is so good with pot roast and gravy!

5 c diced stale sourdough bread or french bread
1 c milk
2 eggs
1 Tbsp flour
1 tsp salt

Steps:

  • 1. Put the diced up bread in a bowl. Bring the milk to a boil and pour over the bread. Cover with foil or if you are using a pan, put the lid over the pan for 1 hour.
  • 2. Beat the two eggs together in a cup. Add to the bread mixture after the hour is up and also now add the tablespoon of flour and the teaspoon of salt and mix all together. If mixture is too soft, add some breadcrumbs.
  • 3. Shape the bread into balls about the size of your palm or about the size of a baseball and drop each ball into a pan of simmering salted water (I just add 1 teas of salt to the water) Put the lid on and leave covered for 20 minutes as it continues to simmer. NEVER LIFT THE LID during the cooking time.
  • 4. Take dumplings out of the water and serve with your favorite gravy over them. This will make 6 or 7 dumplings.

6 slices bacon, chopped into 1/2-inch pieces
1 cup all-purpose flour
1 teaspoon salt, plus more for seasoning
1/2 teaspoon freshly ground black pepper, plus more for seasoning
1/4 teaspoon grated nutmeg
1/2 teaspoon cayenne
1/4 teaspoon baking powder
2 eggs, beaten
1/4 cup milk
1/4 cup chopped parsley leaves, for garnish
Special equipment: 9-inch aluminum pie pan

Steps:

  • In a large saute pan, over medium heat, cook bacon until crispy. Reserve bacon in pan with rendered fat.
  • In a large bowl, mix flour, salt, pepper, nutmeg, cayenne and baking powder to combine. Beat eggs and milk together in a small bowl and stir into dry mixture until smooth and uniform.
  • Bring 6 cups salted water to a boil in a large pot. Poke holes using a pointed chopstick through the bottom of the aluminum pie pan to create a disposable spaetzle maker. Push the dough through the holes into the boiling water. Stir and cook for 3 minutes, or until dumplings float. Remove dumplings and immediately toss in pan with bacon. Season, to taste, with salt and pepper and garnish with parsley. Serve immediately.

½ cup cold water
1 cup all-purpose flour
3 eggs, beaten

Steps:

  • Place the milk and salt in a saucepan, and set over medium heat. In a small bowl, mix together 1 1/2 tablespoons of flour and water. When the milk begins to bubble, stir in the flour mixture, and cook stirring constantly until thickened, 2 or 3 minutes. Let cool until set. You can put the mixture in the refrigerator to speed the process.
  • Fold the eggs into the chilled dough. Add 1 cup of flour and mix thoroughly (dough will be lumpy). Drop into simmering soups by the teaspoonful. Simmer covered for 10 minutes, remove lid, and simmer 10 minutes more.

11 tablespoons all-purpose flour
1 pinch salt
1 egg
12 Italian prune plums, pitted and left whole
12 sugar cubes
2 eggs
⅓ cup unsalted butter
2 tablespoons cinnamon sugar
1 cup dry bread crumbs

Steps:

  • Place potatoes in a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 20 to 30 minutes. Drain. Peel as soon as they are cool enough to handle and push through a potato ricer or mash with a potato masher in a bowl. Set aside to cool completely, about 10 minutes.
  • Combine potatoes, flour, 1 egg, and salt in a bowl and mix into a smooth dough. Shape into a 3-inch log and cut into 3/4 -inch slices.
  • Stuff each pitted Italian plums with 1 sugar cube. Wrap potato dough slices around the stuffed plums so they are completely covered; shape with floured hands into round dumplings.

1 (4 lb) chicken, cut into serving pieces,plus gizzards,if any
1 small yellow onion, chopped
1/4 cup unbleached all-purpose flour
1/2 celeriac, peeled and cubed (about 3/4 pound)
2 parsley roots, peeled and cubed (about 3 1/2 pounds total)
4 carrots, sliced (about 1 pound)
10 small white onions, peeled (about 1 1/2 pounds)
10 black peppercorns
1 bay leaf
1 1/2 quarts boiling water
2 cups shelled peas, fresh or frozen
salt & freshly ground black pepper
3 tablespoons fresh lemon juice
2 large eggs
1/2 cup unbleached all-purpose flour
2 tablespoons vegetable oil
salt
2 tablespoons caraway seeds

Steps:

  • In a large casserole or stew pot, melt the butter over medium high heat.
  • Once it has stopped sizzling, brown the chicken, gizzards (if they are included), and chopped onion until golden, turning occasionally, about 12 minutes.
  • Sprinkle the flour over the chicken pieces and turn them to absorb the flour.
  • Add the celeriac, parsley roots, carrots, whole white onions, peppercorns, and bay leaf.
  • Cover with the boiling water, and bring to just below a boil.
  • Reduce the heat to very low, using a diffuser if necessary, and simmer until the meat is nearly falling off the bone and the vegetables are tender, about 2 hours.
  • At no time should the broth ever boil, otherwise the chicken will be tough.
  • Add the peas and cook for 10 more minutes.
  • Season with salt and pepper and add the lemon juice.
  • While the stew is simmering, prepare the dumplings.
  • Drop the dough by the tablespoon on top of the stewing chicken, making sure the balls don't sink into the gravy.
  • Cover and cook for 20 minutes without looking.
  • Serve immediately.
  • Makes 6 servings.
  • TO MAKE THE DUMPLINGS: Stir together the eggs, flour, vegetable oil, salt and caraway seeds.
  • NOTE: Celeriac and Parsley Root are wonderful vegetables for a stew.
  • Both, though, are big, bulbous, root-like vegetables with lots of ugly, hairy-looking rootlets coming off the central portion.

1/4 cup lukewarm water (110 to 115 F)
1/4 ounce active dry yeast
1 egg
4 tablespoons butter, melted and cooled, plus
1 teaspoon butter, softened
3/4 cup lukewarm milk
1 teaspoon salt
1/4 teaspoon ground nutmeg (optional)
3 1/2 cups all-purpose flour

Steps:

  • To make 12 dumplings.
  • Pour the lukewarm water into a small bowl and sprinkle it with the yeast and sugar.
  • Let it stand for 2 or 3 minutes, then stir to dissolve the yeast and sugar completely.
  • Set in a warm, draft free place (such as a turned-off oven with pilot light on) for about 5 minutes, or until the mixture almost doubles in volume.
  • In a large mixing bowl, beat the egg with a large spoon until it is smooth and well mixed.
  • Beat in the 4 tablespoons of melted butter, and the warm milk, salt, nutmeg and yeast solution.
  • Then add the flour, 1/2 cup at a time, beating well after each addition.
  • Mix with the spoon or your hands until the dough is firm enough to be gathered into a compact ball.
  • Place the dough on a lightly floured surface and knead it by pushing it down with the heels of your hands, pressing it forward and folding it back on itself.
  • Repeat this procedure for about 10 minutes, lightly flouring the surface from time to time to prevent the dough from sticking.
  • when the dough is smooth and elastic, place it in a bowl coated with 1 teaspoon of soft butter, drape it with a towel and let it rise in a warm draft-free place for about 1 hour, or until it doubles in bulk.
  • Then punch the dough down with a sharp blow of your first and knead it again for 3 or 4 minutes.
  • Flour your hands lightly, pinch off pieces of the dough and shape them into 12 balls about 1 1/2 inches in diameter.
  • Lay the dumplings on a floured board and allow them to rise again until doubled.
  • Spread a damp kitchen towel over a rack set in a large roasting pan and on it arrange the dumplings about 2 inches apart.
  • Add enough water to the pan to come to within 1 inch of the rack.
  • Bring to a boil over high heat, cover tightly, and reduce the heat to moderate.
  • Steam the dumplings undisturbed for 20 minutes, or until they are firm to the touch.
  • Serve as hot as possible on a large, heated platter.

So many memories this recipe brings back!!Serve with canned pears.. This is good with very crisp cooked bacon with the sauerkraut and of course sauted onions.

4 1/2 cups all-purpose flour, less 1 tbsp
1 cup milk, plus
1 tablespoon milk
1 (1/4 ounce) package yeast
1/8 teaspoon salt
2/3 cup butter or 2/3 cup clarified butter

Steps:

  • Heat milk a bit and dissolve yeast.
  • Make a well in the flour and pour the yeast into the well.
  • Let rest 1/2 hour.
  • Add remaining milk salt and eggs.
  • Beat vigorously til bubbles form.
  • Knead well.
  • Cover and put dough in a warm place Let rise for 1 hour.
  • Cut off 1/2 fist size pieces on floured surface let rise 15 more minutes.
  • In a deep skillet or dutch oven melt butter and add warm salted water to a depth of 3/4 inch.
  • Add dumplings arranged in one layer touching each other.
  • Put lid on pot, seal edges where lid rests with damp cloths to insure no steam escapage.
  • Cook on med low heat about 20 minutes Dumplings should have a highly desirable brown crust on bottom. May be served with sauerkraut or canned fruit.

This is my great grandmothers recipe that has been passed down. She was from Grodtiz, Saxony, Germany. We love to freeze these dumplings, and serve them typically in a chicken broth.....We just love them!!

Number Of Ingredients 13

1 cup parsley, chopped
10 ounces frozen chopped spinach
1 medium onion, chopped
2 tablespoons oil or 2 tablespoons Crisco
1 small handful oatmeal
1 teaspoon salt
1/4 teaspoon pepper
4 extra large eggs
2 lbs ground beef, round or 2 lbs chuck
4 eggs
1/2 cup water
1 teaspoon salt
1 cup flour (extra if needed)

Steps:

  • Bring oil and spinach to low.
  • Add onion, parsley, oatmeal, salt and pepper.
  • Simmer for 10 min, and let cool in fridge.
  • After spinach mixture is cool add two pounds of ground chuck or round and the 4 eggs.
  • Return mixture to fridge until ready.
  • Make the dough:.
  • Combine water salt and eggs.
  • Add 1+cup of flower until at "perfect" consistency.
  • Divide into three balls, Roll out one at a time to about 1/16th inch thick.
  • Place about 1inch balls onto rolled out dough and for rectangular ravioli shaped dumplings. Roll and use fork to crimp the ends. Dumpling ending at about two inches long. (feel free to be creative on the shape).
  • Boil slowly for 12 minutes.
  • Serve in chicken broth, or freeze for later.

FOR THE Semmelknoedel
8 cups cubed old bread
1/4 cup finely diced onion
1 stalk finely diced celery
3 eggs
1/2 cup butter (melted)
2 Tbsp. dried Parsley
1/2 tsp. salt
1/4 tsp. pepper
Pot of boiling water.
FOR GOULASH SOUP
Authentic Hungarian Goulash
1-2 lbs. chuck or arm roast, cut into 1″ cubes (for a shortcut, buy prepackaged stew meat)
1 large onion, diced finely
1 stick butter
1 tbsp. smoky Hungarian paprika
1 cup of your favorite red wine
1 cup V8 Juice
2-4 cups of Water
1 small can of tomato paste
1 heaping tsp jarred minced garlic (or 3 cloves crushed)
Salt & pepper to taste
Optional: Cornstarch slurry
(boiled potatoes), or spaetzle.

Steps:

  • FOR NOODLES: Put cubed bread in a large mixing bowl. In a small saute pan, saute onions, celery until tender, let cool. In a small mixing bowl, beat eggs and whisk in melted butter, onions, celery, parsley, salt, and pepper. Pour mixture over the bread. Mix and mash with your hands until every single cube of bread is evenly moist. Remove any pieces that are still dry. You might want to add a little chicken stock to ensure bread is moistened. Form into tightly-packed billiards-sized balls. They'll plump up to the size of tennis balls while cooking. Cover with a clean towel and let sit for 1 hour Fill a pot (large enough to accommodate the number of balls you plan to make) about 1/2 way to 2/3 with water and chicken stock bring to boil. Using a spoon, set dumplings into the boiling water. Once they're all in, let cook for 20 minutes. If making a double or quadruple batch, let cook for 30 minutes. Remove from water with slotted spoon and place on a serving dish Drain off excess water before serving. Another meal idea: Drop one in a bowl of chicken broth for a delicious Semmelknoedelsuppe similar to Jewish matzo ball soup. ☕ FOR SOUP: Melt the butter on medium-high heat in a Dutch oven or stew pot then brown the meat in batches. Transfer meat to a dish and set aside. Saute diced onion in the same pot until it begins to caramelize. Stir in paprika and cook for a minute or two. Add wine and meat. Cook, stirring frequently, until most of the liquid is gone. Add water just to cover meat. Stir in tomato paste, garlic, salt, and pepper. Bring to a boil, reduce heat, cover, and let simmer over very low heat for 90 minutes. For a thicker gravy: Corn starch slurry = 2 heaping tbsp. cornstarch dissolved in 1 cup cold water. Stir into boiling sauce at the very end of cooking. Turn down to simmer and cook for an additional 5 minutes until sauce is slightly thickened. MAULTASCHEN (GERMAN MEAT-FILLED PASTA DUMPLINGS)

Maultaschen are a Swabian specialty from southwest Germany. You can make your own wrappers but it is easier to just buy a package already made.

1 lb spinach (fresh or frozen)
2 tablespoons butter or 2 tablespoons oil
1/2 medium onion, minced
1 cup ground beef
3 -4 slices good quality bread, soaked in
milk or water
1/4 teaspoon nutmeg
salt & pepper, to taste
3 -4 eggs, beaten
1 (12 ounce) package wonton wrappers (I prefer the round ones but square will work)
1 egg, beaten with a little
water

Steps:

  • If using fresh spinach, bring a pot of water to a boil.
  • Drop in the spinach and blanch for 1-2 minutes. Drain in a colander and squeeze as much liquid out as possible.
  • If using frozen spinach, simply thaw and squeeze out the liquid in a colander.
  • Chop finely.
  • Heat the butter or oil in a sauté pan and sauté the onions over medium heat till translucent.
  • Add the ground beef and sauté till just cooked through.
  • Drain excess oil and allow to cool.
  • Mix the spinach and ground beef mixture together in a bowl.
  • Drain the bread and squeeze dry.
  • Crumble in the bread, mix well, and season to taste with nutmeg and salt and pepper.
  • Add 3-4 eggs and mix or knead to form a paste.
  • Add 1-2 tsps of the stuffing to each wonton wrapper, moisten the edges with a little of the egg-water mixture, and fold in half.
  • Press down on edges to seal.
  • Cook for 8-10 minutes in rapidly boiling, salted water.
  • Drain and serve with a little beef or chicken broth, in soups, or topped with bread crumbs toasted in melted butter.
  • VARIATIONS:.
  • Use different types of bread for different flavors: rye, whole wheat, or stale rolls.
  • Substitute ground chicken or lamb for the ground beef. A.
  • Add a little minced ham or sausages for extra flavor.
  • Kräutermaultaschen (Herb maultaschen): substitute 1 bunch minced parsley and 1 bunch minced chives or scallions for half the spinach.

4 -6 medium potatoes
1 teaspoon salt
all-purpose flour, as needed

Steps:

  • Peel raw potatoes and grate finely.
  • Put potatoes in a bowl and press down on them while tipping bowl to pour off as much liquid as possible.
  • Stir in salt.
  • Add as much flour as needed to make a firm dough.
  • Have a pot of boiling water ready and drop in portions of dough with a tablespoon.
  • Boil gently, uncovered, until dumplings float.
  • Serve with onions which have been sauteed in butter until they are caramelized, poured over top of dumplings; or also good with sauerkraut.
  • You can also add some grated onion to the dumpling dough if you like (about a tablespoon).
  • Leftovers are good sliced and fried in butter.

1 kg / 2 lbs of starchy potatoes
2 teaspoons of salt
1/4 teaspoon of freshly grated nutmeg
1/2 cup of plain white flour
1 egg

Steps:

  • Scrub and rinse the potatoes well and place in a large saucepan of cold water. Bring the unpeeled potatoes to the boil, add salt and simmer the potatoes for around 35 minutes or until they are just tender. Drain the potatoes and cool them slightly -just enough so that you can handle them. You should now be able to peel the skins away from the flesh of the potatoes with your bare hands. Once all the potatoes are peeled, cut them into even-sized pieces and refrigerate until cold. The potatoes can be prepared the previous day, if desired. Mash the potatoes with a fork or mashing tool in a large bowl. Mix in the salt and freshly grated nutmeg. Add half a cup of flour and mix to combine. With your hands knead the mixture in the bowl until a smooth soft dough forms, add more flour by the tablespoon if the dough remains sticky. Combine one beaten egg with the mixture. Form the mixture into smooth round balls using ¼ of a cup of dough for each ball. At this stage you may wish to insert acrouton, prune or other filling into each dumpling. Croutons are traditionally used to soak up any extra moisture inside the Kartoffelkloesse. Stoned prunes are a common filling when accompanying a Roast Goose at Christmas. A small spoonful of cooked, flavoured ground beef / mince is also a tasty alternative. Seal the filling closed inside each of the Kartoffelklösse. In a large saucepan of salted simmering water, almost boiling, poach the completed dumplings in batches of 4 to 5. Do not place more than 4 to 5 dumplings in the pot at any one time - to prevent them from sticking together or touching during cooking, which could cause them to fall apart! Cook the dumplings for 10 to 15 minutes or until the dumplings rise to the surface. Remove and drain each of the Kartoffelklösse with a slotted spoon into a serving dish. Keep the dish covered to conserve heat while the remaining dumplings are cooked. (Serves 4 to 6)

I love Potato Dumplings and have so far always used the stuff from a packet. But I cant buy that anywhere in the UK, so I had to make my own. After many trials and failures these finally worked and were lovely!

4 large potatoes
150 g plain flour
50 g potato starch
2 eggs
2 pinches salt
nutmeg, 1 grating

  • Cook the potatos in their skins for 30 minutes and leave to cool in the refrigerator for several hours.
  • then peel the potatos and mash them.
  • mix the eggs into the flours and add the mashed potatos, season with salt and nutmeg.
  • kneed into a dough.
  • the dough should be quite dry otherwise the dumplings will fall apart when cooked.
  • shape the dough on a floured surface with floured hands into a roll and cut into 8.
  • make them into balls.
  • drop the dumplings into boiling salted water and simmer the dumplings for 20 odd minutes.

1/2 minced onion,sauteed.
3-4 whole beaten eggs

  • sautee onions and bacon together. boil milk. beat eggs. combine all ingredients and form with wet hands golf ball,(Baseball) sized dumplings. cook in a pot of simmering water for 15-20 minutes.
