1 3/4 c flour
1 1/2 c sugar
3/4 c butter, softened
2/3 c cocoa
3/4 tsp baking soda
2 eggs
2 Tbsp milk

FILLING
1/2 c butter
1/2 c packed brown sugar
1 c coconut flakes, toasted
1 c finely chopped pecans
1 tsp vanilla
1/4 c light corn syrup

Steps:

  • 1. Preheat oven to 350. Cream butter and sugar together. Add vanilla, milk and eggs and mix. Beat in baking soda. Add cocoa and mix well. Add flour gradually, using mixer. You may need to add last bit of flour stirring by hand, as the batter is very stiff. Stir in pecans.
  • 2. Form into 1 1/4 inch balls (I used my 1" cookie scoop and it worked perfect). Put onto ungreased cookie sheet and flatten just slightly using the tips of your fingers.
  • 3. Bake 9 minutes. Let sit for about 1 minute then move to cooling rack to cool completely.
  • 4. Once cookies are finished, make filling (don't make filling in advance; it's easiest to spread when warm). In medium sauce pan over medium heat, melt butter. Add in brown sugar and corn syrup, stirring constantly until thick and bubbly. Remove from heat. Stir in vanilla. Add toated coconut and pecans and stir until well combined.
  • 5. Spread filling by tablespoonfuls onto the underside of one cookie, and top with another cookie to make sandwich.

1 cup butter, softened (no substitutes)
1 cup shortening
1 1/2 cups sugar
1/2 cup brown sugar, packed
1 (4 ounce) package German sweet chocolate, melted
4 eggs
2 teaspoons water
2 teaspoons vanilla extract
6 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 1/2 cups English toffee bits or 1 1/2 cups almond brickle chips
1 1/2 cups walnuts, chopped

Steps:

  • Pre-heat oven to 350°F.
  • In a mixing bowl, cream butter, shortening and sugars.
  • Beat in chocolate.
  • Add eggs, one at a time, beating well after each addition.
  • Beat in water and vanilla.

Rolled cookie with coconut pecan frosting spooned in the center. Moist cookie tastes like the wonderful cake! Labor intensive but really worth it. Dough needs to be refrigerated 6-8 hours before baking for best results. Baked cookies freeze very well.

1 cup sugar
1 cup evaporated milk
1/2 cup softened butter
1 teaspoon vanilla
3 beaten egg yolks
1 1/2 cups coconut
1 1/2 cups chopped pecans
1 pillsbury German chocolate cake mix
1/3 cup melted butter

Steps:

  • In saucepan combine sugar, milk,1/2 cup butter, vanilla and egg yolks. Blend well. Cook over medium heat 10-13 minutes or until thickened, stirring frequently.
  • Remove from heat, stir in coconut and pecans. Cool to room temperature.
  • Reserve 1 1/4 cup frosting on the side.
  • In a large bowl combine remaining frosting, cake mix, and 1/3 cup melted butter. Stir until thoroughly moistened.
  • Shape dough into 1 inch balls. Refrigerate 6-8 hours for best result.
  • Place dough balls 2 inches apart on ungreased cookie sheet. Make indentation in center of each ball. Fill indentation with 1/2 teaspoon of reserved frosting.
  • Bake for 10-13 minutes in preheated 350 degree oven.
  • Cool on cookie sheet for 5 minutes, then remove to wire rack to cool completely.
  • To freeze place completely cooled cookies in tupperware container, with waxed paper between layers. To defrost place on serving tray and loosely cover with plastic wrap allowing some air flow at sides.

1/3 c brown sugar
2 Tbsp brown sugar
1 c white sugar
1 c unsalted butter (room temperature)
1 Tbsp fresh honey
2 eggs (room temperature)
1 tsp vanilla
1/2 c cocoa
3/4 tsp salt
1 tsp baking soda
2 1/4 c all purpose flour
2 c milk chocolate chips
3/4 c shredded coconut
1 c chopped pecans

Steps:

  • 1. Preheat your oven to 325 degrees. Place chopped pecans on cookie sheet and toast 8 minutes until it turns a golden brown in color, turning once after five minutes. After toasted, set the pecans aside and let them cool.
  • 2. Mix brown and white sugars together in bowl, add butter & mix until smooth. Slowly add honey, eggs, and vanilla until all ingredients are combined.
  • 3. In separate bowl sift together AP Flour, cocoa, salt, and baking soda. Add your chocolate chips, 1/2 cup toasted pecans and coconut to the dry mix . Add to the wet and mix until combined.
  • 4. Scoop out cookies of desired size onto parchment lined cookie sheet. (I normally use a 1 1/2" scoop). Top each cookie with a few chopped pecans. Bake 10-12 minutes, rotating pan after 6 minutes.
