Time 1h5m

Yield 6 to 8 servings

Number Of Ingredients 16

2 pounds baby red potatoes, skin on
3 cloves garlic
Kosher salt
2 tablespoons minced fresh parsley
1 tablespoon minced fresh dill
1 tablespoon minced fresh tarragon
1 Fresno chile, seeds removed and finely chopped (about 1 tablespoon)
1 tablespoon minced fresh chives
2 tablespoons finely-minced shallot
2 tablespoons chardonnay vinegar
1 tablespoon lemon juice, plus additional to taste
1 tablespoon whole-grain mustard
1/2 teaspoon honey
1/4 teaspoon kosher salt
Freshly ground black pepper
1/2 cup extra-virgin olive oil

Steps:

  • For the potato salad: Place the potatoes and whole garlic cloves in a large pot and cover by 2 inches with cold water. Season the water liberally with salt. Bring the potatoes to a simmer over medium heat and cook until fork-tender, 20 to 25 minutes. Drain the potatoes and garlic in a colander. Transfer to a sheet tray or cutting board. Gently press each potato and garlic clove to smash them and set them aside in a bowl, covering the bowl with aluminum foil to keep the potatoes warm.
  • For the vinaigrette: In a large bowl, whisk together the shallots, vinegar, lemon juice, mustard, honey, salt and a generous grinding of pepper. Slowly whisk in the olive oil to emulsify the vinaigrette.
  • Add the warm potatoes to the vinaigrette and toss to combine. Add the parsley, dill and tarragon to the potatoes. Toss to coat, seasoning with additional lemon juice and salt to taste. Transfer to a serving bowl and garnish with the Fresno chile and chives. Serve at room temperature or keep covered in the refrigerator overnight, tossing again before serving.

Time 25m

Yield 2 serving(s)

Number Of Ingredients 12

3 medium red potatoes
3 tablespoons vegan mayonnaise (vegan mayonnaise)
1/4 onion, chopped fine
1 teaspoon Dijon mustard
1/4 carrot, grated
lemon pepper
salt
1 stalk celery, diced
1 bunch parsley or 1 bunch cilantro, chopped
1 kosher dill pickle, chopped fine (or 1-2 tbls. dill relish)
1 cup cooked green peas
1 teaspoon nutritional yeast

Steps:

  • Boil potatoes, drain, rinse with cold water, dice when cool.
  • Thoroughly mix Vegenaise with the nutritional yeast, add onion, carrot, pickle, lemon pepper, peas, and potatoes.
  • Mix gently.
  • Garnish with parsley.
  • Serves two.

Tips:

  • Use a variety of potatoes: A combination of waxy and starchy potatoes creates the perfect texture. Waxy potatoes, like Red Bliss or New Potatoes, hold their shape well, while starchy potatoes, like Russet or Yukon Gold, break down and create a creamy texture.
  • Cook the potatoes properly: To prevent the potatoes from becoming mushy, cook them until they are just tender when pierced with a fork. Overcooking will make them fall apart.
  • Cool the potatoes completely: Before adding the dressing, make sure the potatoes are completely cool. This will help prevent the dressing from becoming watery.
  • Use a good quality mayonnaise: Mayonnaise is the base of most potato salads, so it's important to use a good quality one. Look for a mayonnaise that is made with fresh eggs and oil.
  • Add some tang: A little bit of acid, such as vinegar or lemon juice, will help to brighten up the flavor of the potato salad. You can also add some chopped pickles or relish for a tangy crunch.
  • Add some crunch: To add some texture to the potato salad, try adding some chopped celery, onion, or hard-boiled eggs. You can also add some toasted nuts or seeds.
  • Season to taste: Once you've added all of the ingredients, taste the potato salad and adjust the seasonings as needed. You may need to add more salt, pepper, or acid.

Conclusion:

Georgie's Potato Salad is a classic side dish that is perfect for any occasion. It's easy to make and can be tailored to your own taste preferences. With a few simple tips, you can make the perfect potato salad that will be enjoyed by everyone.
