Number Of Ingredients 10

2 large eggs, beaten
1 1/2 c sour cream
2 c fresh (georgia) corn kernels, uncooked *
2 c monterey jack cheese, shredded **
1 can(s) can chopped green chilies, drained (i used mild) ***
1/2 c cheddar cheese, shredded
salt and pepper to taste
* I GOT 2 1/2 CUPS OF CORN KERNELS FROM 3 EARS OF CORN; I JUST ADDED THE EXTRA 1/2 CUP TO THE MIXTURE.
** IF YOU WOULD LIKE IT WITH A LITTLE MORE KICK, YOU CAN USE PEPPER JACK CHEESE
*** I ONLY FOUND A 4 OZ CAN OF THE GREEN CHILIES -I JUST USED THAT -IT WAS ENOUGH.

Steps:

  • 1. Combine the eggs and sour cream; stirring until well blended.
  • 2. Stir in remaining ingredients EXCEPT for the Cheddar Cheese.
  • 3. Spoon or pour into a quiche dish or a 8" x 8" casserole dish (I used a 10 inch tart dish -it worked well.), that has been sprayed with PAM.
  • 4. Top with the Cheddar Cheese.
  • 5. Bake uncovered at 350 degrees for 35 minutes, or until center is done. NOTE: I didn't pre-heat my oven, which may be the reason that I had to cook mine 45 minutes to be done in the middle and as brown as I like it. It tastes as good as it looks1!!!

Time 1h15m

Number Of Ingredients 6

5 cups corn (about 10 ears, shucked, cleaned and cut from the cob (or 40 ounces frozen creamed corn))
1 cup whole milk
4 tablespoons butter (melted)
½ teaspoon salt
½ teaspoon black pepper
1 egg (lightly beaten)

Steps:

  • Preheat the oven to 375 degrees. Generously butter or grease an 8x8 baking dish.
  • Shuck and remove the silks from the corn. Over a large bowl or pan, use a sharp knife to cut down the length of the cob removing the top half of the corn kernels. Then go back over the cob with the flat side of a knife and scrape all the milky liquid into the bowl with the kernels.
  • In a medium bowl, combine all ingredients, mixing well.
  • Pour into the prepared baking dish.
  • Cook in the preheated oven for 45 minutes to 1 hour or until a knife inserted near the center comes out clean and the edges start to turn golden brown.

Tips:

  • Use fresh corn. Fresh corn on the cob is best for this recipe, but you can also use frozen corn kernels if fresh corn is not available.
  • Don't overcook the corn. Corn should be cooked until it is tender, but not mushy. Overcooked corn will make the casserole mushy.
  • Use a good quality cheddar cheese. The cheddar cheese is one of the main ingredients in this casserole, so it's important to use a good quality cheese that melts well.
  • Add some extras. Feel free to add other ingredients to this casserole, such as cooked bacon, diced bell peppers, or chopped green onions.
  • Serve immediately. This casserole is best served immediately after it is baked. Leftovers can be stored in the refrigerator for up to 3 days.

Conclusion:

Georgian Baked Corn Casserole is a delicious and easy-to-make side dish that is perfect for any occasion. It's a great way to use up fresh corn, and it's always a hit with family and friends.
