10 ounces gemelli pasta
8 ounces green beans, halved crosswise
4 small red-skinned potatoes (about 8 ounces)
1 tablespoon extra-virgin olive oil
Freshly ground pepper
1 7-ounce container refrigerated pesto (about 3/4 cup)
1 teaspoon grated lemon zest

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs; add the beans during the last 2 minutes of cooking. Reserve 3/4 cup cooking water, then drain. Set the pot aside.
  • Meanwhile, pierce the potatoes all over with a fork. Microwave until tender, about 5 minutes. Let cool slightly, then chop.
  • Heat the olive oil in the reserved pot over medium-high heat. Add the potatoes, season with salt and pepper and cook, stirring occasionally, until lightly browned, about 5 minutes. Add the pasta and green beans and stir to coat. Remove from the heat and add the pesto, lemon zest and 1/4 cup reserved cooking water; toss to coat, adding more cooking water as needed to loosen. 1 (16-ounce) jar roasted peppers, drained
2 tablespoons (2 turns around the pan in a slow stream) extra-virgin olive oil
2 cloves garlic, finely chopped
1 large shallot, finely chopped
1 cup dry white wine or chicken stock
1 (28-ounce) can crushed tomatoes
A handful chopped flat-leaf parsley
Salt and pepper
Grated Romano, as an accompaniment
Crusty bread, as an accompaniment

Steps:

  • Place a large pot of water on the stove and bring to a boil. Salt the water and cook gemelli to al dente (with a bite to it), about 9 minutes.

1 pound asparagus (trimmed)
2 tablespoons olive oil
¼ cup crème fraiche
2 tablespoons Spinach Parsley Pesto
Kosher salt and freshly ground pepper (to taste)
Zest of ½ a lemon (or to taste)

Steps:

  • Preheat the oven to 425°F.
  • Place the asparagus in a baking pan. Don't worry about finding a pan large enough to hold the asparagus in one layer - the stalks can overlap a bit. Drizzle the olive oil over them and toss gently to coat the asparagus evenly. Sprinkle on the salt, and toss again.
  • Roast the asparagus for 8 to 10 minutes for thin stalks, 10 to 14 for thick ones. If they overlap, just give them a little shuffle with a spatula halfway through the cooking time so they all have a chance to brown a bit. Remember that they will continue to cook a bit after you remove them from the oven, so take them out while they're still a little firmer than you would like.
  • While the asparagus are roasting, blend together the crème fraiche with the pesto, taste and see if it needs additional salt and pepper. (Remembering that you seasoned the asparagus.)

2 tablespoons unsalted butter, divided
1/2 cup coarse fresh bread crumbs
1 pound broccoli rabe
Coarse salt and freshly ground pepper
1/4 cup extra-virgin olive oil, plus one tablespoon, divided
1/4 cup freshly grated Parmesan cheese, plus more for serving
1/4 cup pine nuts, toasted
1 tablespoon finely chopped lemon peel
1 pound gemelli pasta
2 cloves garlic, sliced
Pinch crushed red-pepper flakes

Steps:

  • In a medium skillet, melt 1 tablespoon butter over medium-high heat. Add bread crumbs and cook, stirring until butter is absorbed and bread crumbs are toasted. Remove from heat and set aside.
  • Bring a large pot of water to a boil over high heat. Prepare and ice-water bath; set aside. Season boiling water generously with salt and return to a boil. 1/4 cup fresh lemon juice
1 1-pint basket cherry tomatoes, stemmed, halved

Add lemon juice and simmer until shrimp are just opaque in center, about 2 minutes.Drain pasta well; return to same pot. Add parsley sauce; toss until coated. Mix in shrimp and tomatoes. Season with salt and pepper; top with 1/4 cup walnuts.
