Gemelli with Asparagus, Mozzarella, and Bacon image

Asparagus retains its character even when paired with flavorful ingredients, like the bacon used to give depth to this simple pasta dish.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Number Of Ingredients 7

1 1/4 pounds medium asparagus
Salt and freshly ground black pepper
12 ounces thickly sliced bacon
1 pound gemelli or other tubular pasta, such as penne
1/8 teaspoon red-pepper flakes
2 tablespoons fresh marjoram leaves
12 ounces buffalo or plain mozzarella cheese, cut into 1/2-inch cubes

Steps:

  • Snap off and discard the tough ends of the asparagus. Cut the asparagus into 1-inch pieces on the bias; set aside. Bring a large pot of salted water to a boil.
  • Cook the bacon in a skillet over medium heat until bacon is crisp and all the fat has been rendered, 15 to 20 minutes. Remove the bacon from pan, and drain on paper towels. Crumble the cooked bacon, and set aside. Remove skillet from heat.
  • Add the pasta to the boiling water, and cook until al dente, 5 to 7 minutes. Drain pasta in a colander; set aside.
  • Meanwhile, discard all but 1/4 cup bacon fat, and return the skillet to medium heat. Add the asparagus and the red-pepper flakes to the skillet. Cook until the asparagus is lightly browned. Drain the pasta, and add to skillet with the crumbled bacon, and the marjoram; season with salt. Toss together until combined and heated through. Remove the skillet from the heat.
  • Add the mozzarella, and toss to combine. Divide the pasta among six plates. Garnish each serving with a grind of black pepper, and serve immediately.

Tips:

  • Choosing the Right Pasta: Gemelli pasta is a great choice for this recipe due to its unique spiral shape that holds the sauce well. However, you can also use other short pasta shapes like penne or fusilli.
  • Cooking the Pasta Properly: Make sure to cook the pasta according to the package instructions for al dente texture. Al dente pasta has a slight bite to it and will hold its shape better in the sauce.
  • Pre-Cooking the Bacon: Cooking the bacon separately before adding it to the pasta ensures that it is crispy and adds a smoky flavor to the dish.
  • Using Fresh Asparagus: Fresh asparagus spears are best for this recipe. If using frozen asparagus, thaw it completely and pat it dry before cooking.
  • Adding the Cheese: Mozzarella cheese is a classic choice for this dish, but you can also use other melting cheeses like fontina or provolone.

Conclusion:

This gemelli with asparagus, mozzarella, and bacon is a delicious and easy-to-make pasta dish that is perfect for a quick lunch or dinner. The combination of flavors and textures in this dish is sure to please everyone at the table. With a few simple tips and tricks, you can create a restaurant-quality pasta dish at home.
