Time 30m

Yield 4 serving(s)

Number Of Ingredients 16

2 (15 1/2 ounce) cans black beans, NOT drained
1/4 cup white onion, finely diced
2 teaspoons cumin
2 tablespoons fresh oregano, chopped (or sub 1 tsp dried if needed)
3 tablespoons fresh cilantro, chopped (only fresh or frozen, not dried!)
2 fresh garlic cloves, minced
1 tablespoon fresh lime juice
1 lb pork, cut into 1 inch pieces (I buy pre-cut stew pork)
3 tablespoons olive oil
1/4 cup flour
2 teaspoons cumin
1 teaspoon dried oregano
1/4 teaspoon cayenne pepper (to taste)
1 teaspoon onion powder
1 teaspoon garlic powder
1 (16 ounce) package yellow rice (I prefer Vigo)

Steps:

  • Prepare yellow rice according to package directions.
  • To prepare the black beans, combine the first seven ingredients in a medium saucepan.
  • Bring just to a boil, then reduce heat to simmer on a back burner, stirring occasionally.
  • Meanwhile, heat olive oil in a heavy skillet over medium-high heat.
  • Combine remaining dry ingredients (flour, cumin, oregano, cayenne, onion powder, and garlic powder) in a 1 gallon zipper bag.
  • Add pork to bag and shake vigorously to coat.
  • Remove pork from bag and add to hot oil.
  • Brown on all sides, stirring until done.
  • Remove pork to a plate and turn off heat to skillet.
  • Pour black bean mixture into skillet to absorb pork drippings, stir gently until combined.
  • To serve, put a scoop of yellow rice on each plate, topped with a generous ladle of black beans.
  • Top with pork and garnish with lime wedge and sprig of cilantro.
  • Serve with crusty bread.

Time 15m

Yield 8 serving(s)

Number Of Ingredients 9

1 1/2 teaspoons chopped garlic
2 teaspoons olive oil
1/4 cup chopped red onion
1/4 cup chopped red bell pepper
1/4 cup chopped carrot
2 jalapenos, seeded and chopped
2 cups cooked black beans (drained and rinsed if canned)
1 1/2 teaspoons chopped fresh coriander
2 tablespoons fresh lime juice

Steps:

  • In a skillet, heat garlic and oil over moderate heat until garlic is fragrant.
  • Stir in onion, bell pepper, carrot and jalapeno.
  • Cook mixture, stirring occasionally, until vegetables are softened.
  • Stir in beans, coriander, lime juice, and salt and pepper to taste and cook, stirring till heated through.
  • Keep warm till serving time.

Tips:

  • For the Cuban pork, use a well-seasoned pork shoulder roast. This cut of meat is flavorful and will hold up well to the long cooking time.
  • When cooking the pork, be sure to sear it on all sides before adding the sauce. This will help to develop a rich, flavorful crust.
  • Let the pork shoulder roast cook low and slow until it is fall-apart tender. This will take several hours, but it is worth the wait.
  • For the black beans, use dried black beans that have been soaked overnight. This will help to reduce the cooking time.
  • When cooking the black beans, add a bay leaf and some cumin seeds. These spices will help to add flavor to the beans.
  • The yellow rice is a simple dish to make, but it is important to use the right type of rice. Use a long-grain rice, such as basmati or jasmine rice.
  • When cooking the yellow rice, be sure to add a little bit of turmeric powder. This will give the rice a beautiful yellow color.

Conclusion:

This Cuban pork with black beans and yellow rice is a delicious and easy-to-make dish that is perfect for a weeknight meal. The pork is fall-apart tender and flavorful, the black beans are creamy and delicious, and the yellow rice is fluffy and light. This dish is sure to be a hit with your family and friends.
