0.5 teaspoon salt
0.25 - 0.5 teaspoon freshly ground black pepper
0.125 teaspoon freshly grated nutmeg
1 cup grated Parmigiano-Reggiano or Parmesan cheese (4 ounces)
0.75 cup chopped salami and/or snipped prosciutto
0.75 cup shredded provolone cheese (3 ounces)

Steps:

1 cup/250 ml pancetta, diced
1 onion, coarsely chopped
1 egg
1/2 cup/125 ml freshly grated Pecorino cheese
1/2 cup/125 ml freshly grated Parmigiano cheese
1/2 cup/125 ml Parmigiano, cut into chunks
1 cup 250 ml breadcrumbs
Salt and freshly ground black pepper
