2 to 4 heads garlic, depending on size
2 tablespoons olive oil
2 tablespoons olive oil
3 onions, sliced
2 pounds Idaho or Yukon gold potatoes, unpeeled
Kosher salt and freshly ground black pepper
1 cup whole milk
1 stick (8 tablespoons) unsalted butter

Steps:

  • Preheat the oven to 350 degrees F.
  • Slice the heads of garlic in half crosswise and drizzle with the oil. Wrap the garlic in foil and roast until creamy, about 1 hour. When cool enough to handle, squeeze the cloves into a small bowl and mash lightly with a fork.

1 tablespoon vegan cream cheese, softened
1/4 cup nutritional yeast

1/2 teaspoon chives, for garnish

Steps:

2 lbs new potatoes, red-skinned
8 large garlic cloves, peeled
1 teaspoon salt
1/4 cup whipping cream
3 tablespoons butter

Steps:

  • Place potatoes and garlic in heavy medium pot. Cover potatoes with water. Add 1 teaspoon salt. Bring to boil over high heat. Reduce heat to medium; cover and simmer until potatoes are tender when pierced with skewer, about 25 minutes.
  • Drain. Return potatoes and garlic to pot. Add whipping cream and butter. Using potato masher, mash until well blended. Season to taste with salt and pepper.

1/4 cup white vermouth or dry white wine
1/4 cup canned low-salt chicken broth
3 1/2 pounds Yukon Gold potatoes, peeled, cut into 2-inch pieces
1 cup half and half
6 tablespoons (3/4 stick) butter, room temperature

Steps:

  • Preheat oven to 375°F. Remove papery outer skins from garlic heads. Cut off top 1/4 inch of each head. Place garlic heads in small baking dish. Drizzle with oil. Bring vermouth and broth to boil in saucepan. Pour vermouth mixture around garlic. Cover and bake until garlic is very tender, about 45 minutes. Cool slightly.
